Wow! Who is your pink friend? I live near Chicago, and all waters within a couple of hundred miles have 'advisories' pertaining to consumption of fish because of mercury in the fish, and recently have had chemicals pertaining to the manufacture of fire fighting foam in Lake Michigan. The advisories are in place to warn people regarding the eating, consumption of fish. This applies to ALL waters in the midwest regardless of size. It pretty much reduces the desire to go fishing for me.
I love the education. With a larger fish you can get lots of unique cuts I grew up throwing away. I take all I can now days and enjoy using the entire fish.
Now I know why Japanese people would scavenge fish carcasses from other fishermen when I was fishing with my grandfather in the 70's. I always wanted to ask them what they were doing; but you know... WWII and stuff.

Even though I've never stuck my toe into a salt water anything I feel I could cut up a salt water fish with your help. So easy to follow and listen to. I have been in the commercial fishing industry in Australia for almost 30 years and have gutted, gilled, filleted and sashimied tons and tons of fish and still find it almost therapeutic to watch Reed doing his tutorials. Cheers Mate. Australia
Sadly in South Australia due to some greedy sods, Snapper fishing is banned for most of our coast and limited in the rest for another 2 years due to restocking failures. We have to get any retail stocks from Sydney.

I just returned from my local Asian store, and one of the things I bought was a whole (frozen) _'genuine American red snapper'._ (it looks 100% identical to your fish here, so that's why I'm calling it that.) I've purchased them from this store in the past, baking them whole in parchment paper with baby bok choy and seasonings, but I've never tried to fillet one out and use it for sashimi. _This is why I bought a small one this time around. (1.5 pound for $8.95 per pound.)_ Your video will be a big help when it thaws out. *THANKS!*
I worked in the Alaska commercial fishing grounds for 10 years from Dutch to Ketchikan AK. Life is hell in the Bush but it’s amazing having 50 yard seats and being on that fishing field!!! TV does no justice to the good bad and ugly of a life of a fishin life!!!
Second time fishing out of San Deigo I caught a Moon fish. Every one was saying it was a trash fish. So I gave it to my friend. That lived in Degio. He said it was an amazing fish! And I never had a taste. I've seen others catch them though. And I've never been that lucky again with a moon fish.
My absolute favorite fish in the world is Red Snapper. I remember going to the market, they had just put out a long tray , one huge long filet of a whole fish. I bought the entire thing. As soon as he slid that tray in the display, I was like, "I'll take that ". He said "How much would you like?" All of it. He had to fold it to wrap it.
I love recovering as much meat as possible, cheek meat is always good but at many cleaning stations the waste goes in the water. You should see the water explode, lots of catfish, fish of all kinds, alligators and everything is gone, nothing wasted. Sometimes you eat Gulf snapper and I hear they're good but sometimes you have to take advantage of where you are. Things aren't always the same, some fish taste bad out of some waters but go to the next lake with good water quality and the fish taste much better. Learning a lot about cleaning fish from you, that's for sure!
I dream of eating genuine red snapper again. When I was a little kid, my father would make it into ceviche & it was heaven to eat. I miss those days & it has been many many years ago. I will do my best to try & find it out in California again, but that is almost close to impossible.
Reed, you really are a master teacher of fish cutting. You really should co sider doing g a course or at least take in an apprentice or 3. LoL Your teacher also needs a thumbs up as well. If ever I make it there for some surf fishing I'll be sure to try and look you up...

Listening to your informative talk on the red snapper it seemed appropriate to broaden the topic slightly as not only people in the US are interested in good eating big red fish. The Equivalent to the US east coast red snapper in Australia is the Australian red snapper This fish is actually pink with faint blue spots. Various sub species of this fish are found around the southern 2/3 of Australia and New Zealand. The fish in Northern Australia which most approximates the look and your description of the American red snapper is the red emperor which is more meaty than its' mentioned southern counterpart which is also extremely highly regarded. As in the US there are other similar red snapper like fish in Australian, Greek and Japanese waters.
It's my favorite fish. I tried being a fishmonger I was going thru a lot in my life at the time I thought it would be cool but I only lasted a day. Cheers
My dad taught us not to throw away any of the fish and use the whole thing. The head is usually done as a soup with chunks of fish meat, vegetables, and spices. Reed is correct about the meat between the bones, throw that on the grill, salt and pepper. Best fish tacos ever comes from between those bones.
Very, Very Good. Well done. You're WAY too busy to do this, but I have a large dog and daily treat her to bone soup. Boiling these carcasses, pressure cooker if desired, for a few hours, and the scales, skin & bones, including the skull, completely dissolve into a soupy stew of goodness for my Lab. I strain out all particles, into a large bowl, and schmush whatever solids there are into fine granules of collagen & calcium etc... There is only one part that isn't edible. It's a very small stone that seems to quite often come from the eyes. Kismet loves it on her kibble every night, and after 11 years, she still gleams like a puppy.. I always cook my fish in chunks (like a roast), rarely (unless bought) as fillets. So the only time she has a lot of meat in that stew is if I fillet.

Besides talent, passion, dedication to your craft, I notice that your knives appear to be sharpened so well that you probably could give shaves without nicking anyone! How often do you sharpen them? I’m not talking about honing. Regardless, your skills are the best! Thanks.
Up here in Michigan we do the same thing with our Walleyes. We call the cheeks Freshwater Scallops and of course the wings are loaded with meat that a lot of people just throw away. Never understood that. 🤔

We have red snapper species in Australia too. The ones in the southeast get a big bump on their heads when they are very large.
The wings or the throat is the best part of the Snapper to me!

A lot of people only know Red snapper. I personally have a few other snappers that I prefer, as in school masters, mangrove, silk and yellowtail.
