- Today I’m brewing a Lambic-style sour using two different water sources and two different electric brew kettles. When you’re out camping, you’re often relying on water sources like rivers and streams to stay hydrated. On a recent trip I started thinking - what kind of beer could I make out of this? Would I taste a difference from the water I normally use? Curious, I snagged a couple gallons and planned out a little experiment.
Now, let’s make some beer.

I see a conflict in adjusting the water chemistry if it was going to be sourced from nature. Particular water souce and its characteristics have been part of what have made distinctive profiles and have built reputations for brewers and distillers for centuries. Today, industrial brewers and distillers adjust and treat their water which removes that part of the 'terroir' of the product.

Awesome video! I noticed you pitched yeast when you racked the barley wine over to the barrel? Had it not previously been fermenting in the Anvil fermenter?
It had the same WLP001 in there but I just wanted to make sure some healthy yeast made it in there. A viewer actually recommended a second pitch and I figured, why not! It’ll likely live on in this barrel assuming I keep beer rotating through.

You changed your water profile, but how did you know what your starting point was in terms of minerality given the water was just collected while camping? It seemed to go very cloudy given the amounts you added.
I adjusted them both based on what I knew about the bottled spring water, really just to keep it equal. So equal additions for both.

Thanks dude 🙌🏼 I think I’ll check them at 9mo to see how things are coming along and maybe start considering next steps after 12 months. I will need to kick them out of that mini fridge in the next week or so tho so I’m starting to throttle the temp down to about 70 and I’ll stick them somewhere in my office for the long aging.

Im deciding if the extra 100$ for the 6.5 foundry instead of the gigawort is worth it. Any advice?
In my opinion it’s worth it to not have to mess with a bag. It also has ulwd vs lwd heating so it should scorch less than the gigawort. And of course you can use 240 power with the foundry which saves a lot of time on brew days. I got the gigawort first then the foundry which is a pretty combo

Curious. Is one of the reasons behind the two kettles due to the sour and wild aspect staying away from your usual gear?

umm correct me if im wrong but lambic is wild yeast .
Wild as in not saccharomyces or do you mean spontaneous? It’s a lambic-style beer so I used Brett, lacto, and pedio (wild yeast and bacteria)
@@HopsANDgnarly well i been learning about it and that seems real controlled. most all lambics are uncontrolled they dont know what it will produce. a higher fail rate but a chance to make unexpected complexity. one study concludes there likely many undiscovered organisms in a lambic. or spontaneous ferments. they dont even get the same beer in a different barrel. and it is aged for 8 or 9 months up to years. this is a very interesting watch ua-cam.com/video/pR7B8Z4ZGaQ/v-deo.html
