My struggle meal growing up was corned beef hash (from the can) with white rice. My mama would put that hash in a pan, sauté it with hot sauce, ketchup butter and basic seasonings. Put a little water and butter… in no longer struggling, but I make it every once in a while in memory of her, good food, and good times even when things weren’t so good

The only seasoning she should add to her pasta water is salt 😭 So much is wasted when you drain the water because it hardly sticks to the pasta. Add everything else to the meat, sauce, or bare pasta after you strained it Edit: This comment blew up WOAH But I stand by what I said. I may be an Americanized Italian but I know you only add salt to your pasta water. Then you take some of that pasta water to add to your sauce AND THAT'S when you add all the spices. I also season my meat but it's important to taste through all of this because you could overseason once the pasta water, sauce, and meat come together before topping the noodles.

Sure ramen and deli meats are cheap, but they don’t last multiple meals in the long run so you have to spend money more frequently. Bulk bags of rice and beans and dry pasta last for so long and are cheaper in the long run. The uncle ben’s rice is pretty expensive too if you continually buy it for every meal compared to bulk rice.

My struggle meal is actually something i do whenever i make pasta meal : i'll make extra for the next day and pan fry them with some spices and it's a crunchy and spicy delight, served with the occasional cheese or salad leftover.

I remember in 2013 all I had was 2 bags of shrimps, rice, and a bunch of cream of chicken. Payday was exactly the next day. That struggle meal fed 5 and my cousin was pregnant at the time. This meal has been her craving for every pregnancy and we both still cook this struggle to this day.
I think the actual struggle meal wouldve been better if he stir fried the hotdog pieces first. It adds a crisp and saltiness to it. Combined with the soft noodles and the flavor packet that comes with it, it should be a pretty tasty meal

This was my family’s struggle meal. I still love and make it to this day. My mom would put mustard and onions in it. If we had brown sugar she would add that too.
I used to cook macaroni & cheese with fried hotdogs (cut them to whatever size, fry them and mix with the macaroni & cheese) for my kiddo's, with can veggies on the side. I cooked a lot of rice combos as well. So, those would be my favorites in that order. Fun to watch the reactions though!
My struggle meal is Spaghetti, chicken noodle, or potato soup. Lol Make a big pot of it with cheap ingredients, freeze leftovers, eat for a week. Can also just store the leftovers but my mom always froze them. To me, anything you can make that is filling and will cover multiple meals is good. As a plus, all the meals can be made for under $10.
My mom’s go-to struggle meal was always tuna casserole. $1 box of pasta, $1 can of tuna, $1 can of campbell’s cream of mushroom soup thinned with some milk. She wasn’t pretty but she fed a family of 3.

My struggle meal was basically two. The first it’s maze meal ( Iv had it in the uk and in uni but it’s an African thing) ( that’s what it’s called in the west) made into a sort of grits way. But it’s sweet and soupy. You add milk, butter if u had it and some sugar. Best thing ever in the morning. U let it go around the sides of the bowl using a spoon and blow. This cools it down as it’s doesn’t cool fast. Then u just scoop up the ring around the bowl. In the uk, it was ever bake beans on toast or something my mum made. It was semi cooked baby potatoes and egg fried with soy sauce. It’s so good and it’s definitely something I made continuing into uni. Also one of my biggest childhood memories ( and even now, I know eggs are a lot rn but I get them off fathers hens).
This was fun. I’ve had sleep for dinner before, and for breakfast too. I’m surprised nobody made a tuna fish dish. And to think, I practice intermittent fasting on purpose now!

Yes, it's kind of cool to get a jar of artichoke hearts or something at the food pantry. I usually get a couple small bottles of olive oil, too because you aren't buying olive oil when you're struggling. Some brand name Oreos or something.

I’m a Latina in the US, and grew up poor. My favorite struggle meal was weenie wrapped in a tortilla. So good! Pack of flour tortillas are cheap, heck, even making them is super cheap. It’s just flour, baking soda, water, salt and fat. 😂

My struggle meal growing up was corned beef hash (from the can) with white rice. My mama would put that hash in a pan, sauté it with hot sauce, ketchup butter and basic seasonings. Put a little water and butter… in no longer struggling, but I make it every once in a while in memory of her, good food, and good times even when things weren’t so good

Mac & cheese with hotdogs was practically a staple in my home growing up. Lol. Adding a slice or two of Kraft singles in there to melt would help boost the flavor.
The only seasoning she should add to her pasta water is salt 😭 So much is wasted when you drain the water because it hardly sticks to the pasta. Add everything else to the meat, sauce, or bare pasta after you strained it
Edit: This comment blew up WOAH But I stand by what I said. I may be an Americanized Italian but I know you only add salt to your pasta water. Then you take some of that pasta water to add to your sauce AND THAT'S when you add all the spices. I also season my meat but it's important to taste through all of this because you could overseason once the pasta water, sauce, and meat come together before topping the noodles.

my struggle meal as a kid was raw ramen because we didnt have a microwave and our gas was off. it was paired with some type of canned veggie because my school gave out canned veggies and packets of oatmeal for everyone.

Sure ramen and deli meats are cheap, but they don’t last multiple meals in the long run so you have to spend money more frequently. Bulk bags of rice and beans and dry pasta last for so long and are cheaper in the long run. The uncle ben’s rice is pretty expensive too if you continually buy it for every meal compared to bulk rice.

My struggle meal is actually something i do whenever i make pasta meal : i'll make extra for the next day and pan fry them with some spices and it's a crunchy and spicy delight, served with the occasional cheese or salad leftover.

My mom's go to was sopa de conchas with corn, ground meat, and potatoes. That or fideo, still some of my favorite meals and I never thought about how she made that to stretch out the budget when my older half brothers came to stay with us doing the summers.
I remember in 2013 all I had was 2 bags of shrimps, rice, and a bunch of cream of chicken. Payday was exactly the next day. That struggle meal fed 5 and my cousin was pregnant at the time. This meal has been her craving for every pregnancy and we both still cook this struggle to this day.
The ramen with hotdog was definitely my struggle meal. Moms made a whole pot of it for dinner once 😂

I think the actual struggle meal wouldve been better if he stir fried the hotdog pieces first. It adds a crisp and saltiness to it. Combined with the soft noodles and the flavor packet that comes with it, it should be a pretty tasty meal
My favorite struggle meal was always pinto beans made from dried beans in the cupboard (because of course you always have those around in case Times got lean) with hot water cornbread and rice. If I had some ham hocks in the freezer That was even better. If not, I just used fat from leftover bacon grease.

Corned beef used to be a struggle meal until 1 small tin got more expensive than 1 pound of chicken. I haven’t had it in a while cause I feel like if I’m going to buy that, I might as well get some chicken or turkey or even beef. I’m Jamaican tho. So not sure what it’s like in your country.

Some of the struggle meals I had as a kid..that I loved… elbow noodles with butter and salt, pepperoni and mustard sandwiches, tomato soup with elbow noodles and hot sauce in it with grilled cheese, baked beans with hot dogs in it and obviously ramen.
My struggle meal was ice, salt, and lime. If I was feeling fancy I would add cayenne pepper.

Did anyone else’s family make “Beenies and Weenies”? Literally the cheapest hotdogs they could buy along with whatever baked beans were on sale/cheap. I actually LOVED it and haven’t had it in a long time. I’ve been incredibly blessed to not have to have sleep for dinner/breakfast. I’ve had some food that wasn’t the best, but I have been EXTREMELY lucky.
This was my family’s struggle meal. I still love and make it to this day. My mom would put mustard and onions in it. If we had brown sugar she would add that too.

I used to cook macaroni & cheese with fried hotdogs (cut them to whatever size, fry them and mix with the macaroni & cheese) for my kiddo's, with can veggies on the side. I cooked a lot of rice combos as well. So, those would be my favorites in that order. Fun to watch the reactions though!

My struggle meal is Spaghetti, chicken noodle, or potato soup. Lol Make a big pot of it with cheap ingredients, freeze leftovers, eat for a week. Can also just store the leftovers but my mom always froze them. To me, anything you can make that is filling and will cover multiple meals is good. As a plus, all the meals can be made for under $10.
That's the thing, if you're struggling, you don't have the ingredients to make spaghetti.

My struggle meal was basically two. The first it’s maze meal ( Iv had it in the uk and in uni but it’s an African thing) ( that’s what it’s called in the west) made into a sort of grits way. But it’s sweet and soupy. You add milk, butter if u had it and some sugar. Best thing ever in the morning. U let it go around the sides of the bowl using a spoon and blow. This cools it down as it’s doesn’t cool fast. Then u just scoop up the ring around the bowl. In the uk, it was ever bake beans on toast or something my mum made. It was semi cooked baby potatoes and egg fried with soy sauce. It’s so good and it’s definitely something I made continuing into uni. Also one of my biggest childhood memories ( and even now, I know eggs are a lot rn but I get them off fathers hens).
This was fun. I’ve had sleep for dinner before, and for breakfast too. I’m surprised nobody made a tuna fish dish. And to think, I practice intermittent fasting on purpose now!
