You can do that in the original game too. Get a big enough run up and you can jump the gap.
There's even a mini game out there where you can do some mounted archery.

May I suggest you "WiseGuys Zelda64:recompiled", it has Majora's Mask running in 60 fps and 4k. Ray Tracing coming soon as well. Give it a try
