Now that Summer is here these delicious summer salad recipes are my go to weekly.
These 3 salads are gorgeous and so full of flavor. They are great for entertaining and hosting. Hope you enjoy them as much as I do.

Recipes:
Beet and Feta salad dressing:
1/2 cup balsamic vinegar
3 tbsp honey
3 cloves crushed garlic
S/P
Cucumber salad dressing:
1/2 cup sour cream
1/2 container feta
S/P
Mixed green feta salad dressing:
Plain yogurt
3 cloves crushed garlic
Squeezed 1/2 lemon
Oregano
Parsely
S/P

As your resident Greek fan I truly appreciate seeing you use a block of feta and not that unspeakably horrible crumbled bits. They are nothing but dry pieces of flavorless cheese.
P.S. We also love making a watermelon and feta salad on hot summer days. The sweet and salty combo is delicious.

Yes to full meal plan! All these salads look amazing and delicious. Beets are a favorite of mine. I can’t get enough of them, and combined with feta, walnuts and the dressing, oh my! As usual, your dishes are a beautiful and so thoughtfully done.

Yum! Great job showing the salads and ingredients. The cucumber salad brings back a lot of memories of my mother, who made that salad often. I make it some, and I thin the sour cream with my homemade kefir. High in probiotics! Keep showing us your delicious recipes!

I use it interchangeable red or pure onion. But really it is purple😜. Tomatoes, radish's, bell peppers and red chili pepper are red to me!

These look great. I especially appreciate the tip on preparing the beets; I usually boil them in the skins and use that liquid later for cold borscht taught to me by a Russian friend (I can send that recipe) -- but baking in parchment seems much easier if I don't need the liquid!! Shavuot sameach!

Some lovely salad ideas; I’m thinking the cucumber salad would be nice dressed with Greek yogurt, a bit like tzatziki.

Thank you for the beautiful salads and great dressing recipes, I'll try them all. I might add sliced red radishes to the cucumber salad as my Aunt Esther use to do that. I use to use red/purple onions in salads, but my family prefers the sweet onions in my salads like Walla Walla or Vidalia (they do contain more water then red/purple. I cook with yellow onions. Happy Shavuot!
