Great analysis. As a proud Beyer M201 owner who often contests the SM57 being the "all-rounder" that people like to say it is, I do think it really holds it's own when it comes to the acoustic guitar and does a better job than most other dynamics I've heard in comparisons. It may be lo-fi in comparison to what a condenser can do, but it just works. The right kind of mid range bite.
Great Demonstrations ! It would have to be a pretty bad microphone for the tone of that guitar to sound bad. I do think the instrument and the player are the primary concern. Without those being good even the most expensive mic isn't going to help. So best to spend your money on a good guitar and a decent but not super expensive microphone. Still it was good to see the effect placement has on the recording.
I like a small diaphragm 14th fret, slightly above, aimed at the sound hole blended with an Internal condenser, no piezo. I once tried recording with the microphone in my Samsung ear-buds, hanging from the back of a chair in a motel room. I was surprised at the quality out of that for sure.
