The rooster is believed to be a call back from the first game, a representation of Sam her adoptive Father that also has gone missing. Along with the possum being possibly tied to the company that trapped Rebecca in the first place as Amanda as the second tape suggest it will be an enemy. When the possum attacks there is the option of helping Amanda. There are videos out there that explain the secrets and hidden lore. It's both sad and creepy what is believed to be going on here.

(I can’t remember all of it, but from what my sister said and the hints in the game I am making this theory/statement) Amanda’s father originally made a show and/or book about his daughter I think, anyways, some type of scientists or film crew wanted to remake the story, but they wanted to do it with amanda in it. The dad said no (something bad happens) and they take Amanda away from her home and put her soul in a show. They made her forget by messing with her mind, take wooly as a example, he told her that it was his birthday she forgot but it actually was her freind KATES birthday! They told her false info to stop her from waking in the reality (REMEMBER I THINK) that one moment she was talking about the rooster and asking what it was called, she acted strange when u type her dads name :0. I think the reason why she talks about death is because they killed her in order to trap her soul (which explains why she is a old show and is still lasting) I think because of her soul being trapped she turned into some demon, which is probably why she asks if “hanging up dolls actually wards off demons” There is more info but if u wanna hear more reply more.❤
