All that should have been addressed at plan check but you are right, the pure incompetence of pretty much all cali government agencies is staggering!!! Anything you try say or do will cause you issues down the line.

LOL with all the camera movement, I am "tired". You sure have done a lot to the place, with even more to get finished, BUT . . . this is really going to look so very nice and inviting when it comes to serving the pizza. YOU GOT THIS!!!
Actually, ceiling tiles are no better and can be harder to keep clean. I agree with your assessment of today's building code requirements but not much one person can do about it. To bad you've been at that project a whole year and don't even have 1st pizza in the ovens yet. Hope i all works out for you. Make the pizzas like the old Italians do and you'll be okay. That is tasty sauce and good quality cheese. Good luck.
How many pizza's do you expect to sell on a busy night? I've never worked in a busy shop where one person could do all the prep and run a pizza line by themselves.

I remember you talking about whether the city would allow the beams to show or not, that really sucks you’re losing that aesthetic part of the building. There’s one thing I’d appreciate your thoughts on and that is have you considered putting in a door height partition wall in front of the bathroom(s) so that the family tables don’t have to see people coming in and out of the toilet? I know it looks like you would lose some sitting though because of ADA.
In watching this video, I thought I saw 2 bathroom doors side-by-side but the camera went too fast for my eyes to really catch it. I also thought of a short wall, just a one-piece wall to go in front of both bathroom doors.

Pizza tastes worse than frozen from Vons. And you really thought what mammoth needed was another restaurant serving pizza? If you search yelp, 20 results for pizza show up. RIP public house, massive disappointment for our community.
