It's legit cold in there. First thing I do when I walk in is turn on the oven and burners just to raise the temp a few degrees.

Raising the room temperature from 65 to 85°F would reduce the density of the air in the room by about 5%, which in turn makes the helium slightly less buoyant relative to the room air. Might help stop it from ripping the balloon apart / flying away so fast. Mixing in some regular air or nitrogen with the helium would also work.

I literally just watched Grant Achatz' Chef's Table episode. Does the team at Alinea use gelatin? Aren't there certain ways you can cook sugar to get the same gelatinous effect... Like Turkish Delight.

The stove is electric so it takes forever to heat up. He’s using an induction burner which is far more powerful, precise, and quick to heat up.

Jorge Padilla its kinda easy to get xanthan gum around hus area I guess? I can get that frm supermarket. If u meant, the availability of xanthan gum is as salt like he mentioned, then sorry, its not, but its easily available if ure not lazy to go out. Have a nice day.

probably because he is working with sugar, something you need to be very precise with. I'd say the portable cooktop is more accurate than the regular one
because he has to face camera, with the normal stove top he would be looking at a wall.

hey htere... great concept but ... the tank is way to close to the heat...
You'd be right for a normal electric coil setup, but it's an induction cooktop, it won't heat the surroundings.
Helium is not flammable lol
j.tv that is true but a pressurized tank .. that was my concern. I work with helium by the way so I know it is innate.
