Bento boxes are available inside the Shinkansen and on the platforms, but there is not much variety, so it is recommended to buy before entering the gate of the Shinkansen!
I don't think there are many vegetarian ekiben available. There are many stores in Tokyo Station that sell salads and prepared foods, so you may want to go to those stores :)

Ekiben are mostly sold at room temperature. The containers are not microwave-safe, so most of them can't be reheated. It's best to eat them on the day you buy them :)

There is an Aluminum foil pouch contained inside the Ekiben, under the food compartment. Pulling the activation string removes a separation strip that enables subcompartments containing Magnesium and Calcium Oxide to mix with Water inside the pouch. This starts a chemical reaction and the resulting heat transference warms up the meal. After approximately five minutes of warming, the meal can be consumed.

Yeah, Tokyo Station is recommended because there are restaurants from other places in Japan and plenty of shops!
