Kirby’s Epic Yarn was specifically made to be “easy.” It wasn’t meant to challenge you, just make you comfortable. Mostly because you physically could not die, and your score was based on how many beads and collectibles you got through every level. Modern Kirby however is a bit easier than back then, but the True Arenas in each game are still wildly difficult Also yes, you do fight Master and Crazy hand in some of the games. Eating them gives Kirby most of his Moveset from Smash
"Dumbed it down" doesn't mean bad. They are enjoyable to play and come back to. Hell, older games were easy to with some challenge. The Crystal Shard is pretty easy.
the games i thought were hard as a kid when i came back to them as an adult were painfully easy. it was never a matter of them changing the difficulty of games we just grew up

Kirby's Return to Dreamland isn't exactly easy. As someone who has played and still has a copy, it could be a challenge, especially extra mode, which the the story mode two times harder and your health bar is reduced to half of what it usually. I suggest you play it to get the full experience as it is a enjoyable multilayer game but solo is fun too :)
Also fun fact: It is the first game that where Meta Knight and King Dedede are now Kirby's allies, no longer enemies and the introduction of Bandana Waddle into the series :) as well as more addition to Kirby lore :D

Looks like you guys are almost caught up with the whole series(so far). Not sure if you're going to react to it since you technically say it already, but there are some differences between the normal Something About Super Mario All Stars video and the version in the Subspace Emissary episode: First, in the original All Stars video, Mario didn't jump into the lava to continuously smack the shit out of Bowser after he beat him. Secondly, when Mario did the BLJ in the original video, Birdo didn't have the chance to defend against Mario when he flew in and he had an easier time kicking her ass. And lastly, the titles of each game that Mario was in didn't look or sound glitchy in the original video. Same goes for his travels in each one. The reason they were like that in the Subspace episode was because of Mario's speedrunning. It was causing time-space to glitch out BIG TIME.
Kirby was pretty much made to be easy. However if you want to 100% them, that's where challenge comes in. Extra mode, True Arenas, and most recently extremely harder bosses it looks nearly unfair (Kirby Star Allies especially).

I heavily recommend playing Return to Dreamland and the newer Kirby games for the experience of how true arenas are pretty much for players who has a decent skill with their abilities or no abilities (which takes arguably more skill), knows the enemies attack patterns well and windows to attack them, and are able to take the least damage as possible since there are fewer opportunities to heal and heavy roadblocks like Shadow Dedede and Dark Meta Knight in Triple Deluxe, Hr-D3 and Galacta Knight in Return to Dreamland, the Three Mage Sisters in Star Allies (who have a OHKO move btw) and Morpho Knight Ex can and will make you start over if you be too reckless. Oh, and the final soul boss tends to be tens times harder than the original with more punishment of not knowing their attack patterns along with a new phase.
