    Uncle Roger is funny but IMO, whatever makes something taste good is "the right way". If it tastes bad, then it's "the wrong way".

    Guys please stop taking uncle Roger seriously. Hes a comedien, and its a bit. Lets get over it. Your food is amazing. I also love how you use your old pans and sheet trays that have lots of "love" as you call it. Im so sick of all these youtube cooking videos with brand new pans and sheet trays.

      Yeah, I agree. I'm actually a fan of him, but I think people bring him up a bit too much. It gets really annoying after seeing so many people that either shit on him when they're the people who are wrong or are the meat-riders who agree with everything he says. I've honestly tried ignoring reading entire comment sections just so I don't get triggered lol. Uncle Roger also gets things wrong quite often, so I would never follow him strictly for food advice and listen just for the funny bits.

    fun fact because everyone always says "dried out" rice, what youre looking for for fried rice is not to "dry out" the rice, you want the rice to ge stale like old bread and the starch to recrystalize, the difference between dried and staled rice is dried rice is well dry. Staled rice isnt and so when frying it the starches relax again and the rice becomes soft but not dry, also the staled rice is more durable and wont break when hitting with the ladel to break the rice up into singular kernels.

    My pans stay in the oven. It's how my grandmama did it, it's how I do it. All I have is carbon, cast iron, and stainless steel anyway. So it's safe in the oven.
    Lmao @ the uncle roger comments. The man is a goat with his roasts. Funny as hell. I love kimchi fried rice, aged and funky, with my homemade mayo that's similar to kewpie.

    Lau has a good video on making fried rice without it being a day old. Requires more skill to get the right texture but it's doable

    Ketchup makes a great sweet and sour sauce. Don’t even buy it anymore because I prefer to make my own sauces.

    Common, Matt. Uncle Roger is a comedian, and I think he's hilarious. But he can't cook. He portrays the older uncle who "knows it all" that all Asians have in their families :-)
