More than a few things are done to the truck including remapping the ecu. Stock TRX tops out at 116, his trap speed was 130. Sounds like its cammed, likely has a larger throttle body than what came from factory. Among 2-3 likely other mods(built bottom end, e85, etc).

Putting the tailgate down will actually make you slower! Only by hundreds of a sec but it's not necessary.
I don't know about making you slower but there is no benefit to lowering the tailgate. Wind tunnel testing is done with the tailgate up.
