    When winter arrives, our ecological garden or food forest undergoes a drastic transformation.
    With the first frosts and the fall of temperatures, the garden will appear covered by a gleaming white layer.
    This beautiful event that we can enjoy during the coldest hours of the day, probably at the dawn; it is a clear signal of the beginning of the process that our fruit trees will experience throughout the winter season.
    After the cycle of the majority of annual crops has been completed, a large part of our deciduous fruit trees enter into winter lethargy, showing their naked stems, waiting for the arrival of the spring resurgence.
    During this period of latency, the phenomenon of vernalization or minimum amount of cold hours required occurs.
    We will speak of vernalization, referred to the herbaceous species, as the requirement of cold necessary for the induction of its reproductive stage.
    However, in the deciduous fruit trees, the requirement of cold is key to breaking their dormancy, both of their vegetative buds and of the floral buds.
    The cold hours required are, therefore, an essential element in the adaptation of the species to its environment.
    For all that said, an appropriate choice of the varieties that we will incorporate into our food forest is essential, otherwise, there will be delays in the opening of the growth buds and flower buds, as well as irregular sprouting, the fall of flowers and a decline in fruit production.
    The number of hours in which the temperature is below 7 ºC (44.6º F) is called cold-hours. There are several methods, which we will address on another occasion, to calculate the necessary cold hours.
    It is fascinating to contemplate how nature adapts our plants through a transformation that will culminate with the next harvest. Vernalization is the natural method and the appropriate option that we should use in organic farming.
    Unfortunately, we often see as in modern commercial agriculture, crops with high requirements of cold hours, are grown in warm areas where such temperatures do not occur, and the flowering of fruit trees and other plants is induced with the use of chemical hormones.

    When our fruit trees are full of dormancy, it is the moment when we will carry out the pruning.
    Preferably in the middle of winter, in new moon.
    With the arrival of spring, they will sprout again with force to bear fruit.
    Winter and all the transformation of nature during this season is the best example of the cyclic flow of life, dying and rhythmically re-emerging in a cosmic dance that never ceases to amaze us with its mysticism, majesty, and beauty.
