Some claim they can taste the difference. However in the retail market the lefse made from dehydrated potatoes and lefse made from raw potatoes sells for the same price usually

sorry for delay in an answer.. the main reason to use instant potatoes is the shorter prep time.. no boiling potatoes, pealing etc..

I suggest adding "gluten free" to the title of these videos. This is the first time I've seen a lefse recipe that doesn't use wheat flour.
