Vietnamese Chicken Noodle Soup | Pho Ga

Try my delicious and easy Vietnamese Chicken Noodle Soup!
Ingredients:
1 Free-Range Chicken
2 chicken carcasses
1 medium sweet onion
1 medium ginger
2 shallots
3 tbsp fish sauce
2 tbsp chicken bouillon
1 lump rock sugar (1 tbsp sugar)
2 cardamom pods
1/2 tbsp fennel seeds
1.5 tbsp coriander seeds
1 cinnamon stick
6-8 star anise

there is one saying in Vietnamese: "you can tell how good a phở gà (chicken pho) by looking at the color of the broth". and as a phở-gà-lover, I have to say: that's a darn good color. you nailed this recipe.
