HDR provides a few technical benefits, mainly more bits allowing more color depth and less banding, but other than that, mastering is what matters. You can master SDR content to look the same as the HDR, the only risk you take is banding.
I've been wondering about this for a while, and it looks like it might be that the phone can't actually do hdr in higher resolutions. Looking at the stats of the video, I was dropping a lot of frames in 1080p (which is the max when the video is 4k, my display is 1440p). I switched to 480p and was no longer dropping frames. It looks like my s8 just isn't powerful enough for HDR
When a video is uploaded, sometimes it takes a while for all of the resolutions to be ready in the settings. I always just try the next day or later that day with wifi.
On my S9+ on wifi at my house it played the whole video with 0 buffer wheels. Just upgraded from the Moto Z Droid Force (got it 4-5 years ago, never cracked screen after 99999 drops). The highest quality setting on my S9+ was 1440p 60(fps) HDR

I'm on a regular S8 and to be hobest, it looks awful. Without even counting dropped frames, the compression artifacts are just too bad, and I remember it looking better before the hdr update. If we could turn hdr off it would be great (to compare or simply to save bandwith, apart from this weird cases where it looks worse instead of better)

Google says that UA-cam’s HDR streaming is available on the new ‘Chromecast Ultra’ and “soon” on Samsung 2016 “SUHD” and UHD TVs. If you have any other device you are out of luck for now but Google says that it “will work with partners to enable streaming of the HDR version”.

On the OnePlus 7T Pro- I didn't really feel any difference from any other youtube video .__. the colors "popped" a bit more, but that can just be achieved by selecting "Vivid" in display settings...

Aside from better contrast as you described, HDR also makes colors a bit more vibrant and it increases the range of color shades. For example, the person in the pink jester outfit: with HDR enabled, I can see more shades and variations of color. Looks very nice.
Despite the S8 and S8+ having UA-cam HDR support already, watching it on my S6 with QHD AMOLED display is already stunning! (Tip: if your display is 4K or 2K, make full use of the res, you'll never know how badass it is after cranking the resolution up!) This shows the power of RED's color science. Comparing side by side to my 2012 Acer 1080p IPS LED display, OLED wins the battle to my eyes (I'm alittle bit of a color dork), as the colors in OLED pop and look true to life compared to IPS 1080p (maybe it has also got to do with reduction of res, my S6 was playing in 1440p60 without HDR) I might have a look at this again when I acquire my next phone, which will definitely be a Samsung and it will have to include 5G connectivity.

Frankie Ambrosio Exactly! The human eye cannot tell the difference in greater pixel density (4K for example) on such a small screen (even on ProMax). 4K is meant for bigger screens to appreciate the additional pixels.

My current phone is an iPhone 8 with an already failing battery and finnicky touch screen. My Galaxy Note 4 was definitely the best experience I've had with a phone display, it is noticeable over 1080 for sure. As for what I watched this on, it was a Dell Inspiron with a true 4k display.

Frankie Ambrosio Exactly! The human eye cannot tell the difference in greater pixel density (4K for example) on such a small screen (even on ProMax). 4K is meant for bigger screens to appreciate the additional pixels.

@@ILovinGunz My old Galaxy Note 4 had 1440p, in 2014. I really meant to say 1440 but 4k would be pretty cool. Either way what is your point? My current phone is an iPhone 8 with an already failing battery and finnicky touch screen. My Galaxy Note 4 was definitely the best experience I've had with a phone display, it is noticeable over 1080 for sure. As for what I watched this on, it was a Dell Inspiron with a true 4k display.
