    Stir frying razor clam meat with tri-colour bell peppers

    三色椒炒蟶子
    材料:
    急凍蟶子肉300克
    三色椒適量
    蒜頭3粒
    辣椒仔1隻
    豆豉10粒
    處理:
    1. 蟶子,清水解凍。
    2. 蒜頭,去皮,切碎。
    3. 辣椒仔,打直一開二,去籽,洗乾淨,切粒。
    4. 豆豉,清水洗乾淨。
    5. 三色椒,清水洗乾淨。
    6. 蟶子已解凍,倒去水分,加入粗鹽一湯匙,乸2分鐘,去除雪味、腥味,及加入少許鹹味。
    7. 三色椒,去籽,洗乾淨,切細塊。
    8. 蟶子,清水沖洗乾淨,擎乾水。
    烹調:
    1. 大火在鑊內煲滾清水一升。
    2. 在鑊內加入鹽一茶匙。
    3. 加入蟶子,烚30秒,倒去水分,清水沖洗乾淨,擎乾水。
    4. 大火在鑊內燒熱油一湯匙。
    5. 加入蒜頭、豆豉及辣椒,爆香。
    6. 加入蟶子,轉慢火。
    7. 加入調味料:
    a. 蠔油一茶匙
    b. 糖一茶匙
    炒勻。
    8. 加入三色椒,炒勻。
    9. 加入適量生粉芡,炒勻。
    10. 完成,上碟,可享用。

    Ingredients:
    Frozen razor clam meat 300g
    Tri-colour bell peppers appropriate amount
    Garlics 3 Nos.
    Chili 1 No.
    Preserved beans 10 Nos.
    Preparation:
    1. The clams, defrost in tap water.
    2. Garlics, get them peeled. Chop well.
    3. Chili, divide it into 2 shares vertically. Remove seeds. Rinse with tap water. Dice in cubes.
    4. Preserved beans, rinse with tap water.
    5. The peppers, rinse with tap water.

    7. Add seasoning:
    a. Oyster sauce 1 tsp
    b. Sugar 1 tsp
    Fry well.
    8. Add in the peppers, fry well.
    9. Add in appropriate amount of tapioca sauce, fry well.
    10. Complete. Put on plate. Serve.
