I like both left over and newly cooked rice as long as it's a good quality rice. It always makes your fried rice tastier than using not so good kind of rice. I tried the cheap kind of rice and fried rice didn't turn out as good as the better quality rice. I use "3 Ladies Milagrosa" all these time and will never switch to any other brand anymore. There's a third option to cook the rice and speed up the drying process by spreading rice on a baking sheet and cooling it off in the fridge. But this is only if you had the extra time. Will try frying rice after cooking.
I prepare to use the new cook steam rice. The left over rice I still put to microwave to make it warm and easy to mix and I add the salt to the rice and it’s ready to cook.
The first one was long grain Spanish rice. The second one was day old and refrigerated Jasmine rice which he said was much sweeter and flavorful in the end.
