Came across your channel, good stuff! Here's a culinary tip for you: Classic breading method is pat the fish dry first, then bread in the following order: 1) Flour; 2) Egg wash; 3) Panko. Comes out way more crispy like that, and the bread crumbs stick better. Be sure to season the fish, the flour, and the panko with salt/pepper (or whatever seasonings you use). I've also started using an air fryer. Using air fryer eliminates the need for so much oil for frying. But if you use one air fryer, then be sure to mix your bread crumbs with a little bit of oil (maybe one tablespoon) before breading. That way it browns up nicely in the air fryer. Keep up the great work!
I'm not a fisherman myself but I've found dry brine as a really good step in cooking most meats including fish (not fresh usually). Try salting your fish first and setting it in the fridge on a cooling rack so that air circulates all around it for an hour than following all the steps you mentioned. I can't explain the food science to you but it makes a difference in all of the best ways.

I like me some catch and cook channels, it's a popular wave that will get you views automatic. What I really wanna say though is some of my favorite youtube channels ever are the ones who share with their neighbors, ps. I live next door. Should’ve gave the toau to the stray cats. Don’t throw it back. They are invasive and killing the kumus, moi, all the native reef fishes.
