Why do you think that RPi's are still hard to find? They are available in heaps everywhere. Microcenter is a local distributor to me and they have hundreds of all types in stock.
I have a Raspberry pi 5. Do I download the same Raspbian image as you did for the Le Potato(AML-S905X-CC)? Can many of the manual steps be bypassed if I use the R pi gear icon to set ssh, username, password, etc? Thanks

They were at the time the video was made since it's a little over a year old now. Luckily they are easy to find now as you mentioned.

Would VNC work as an alternitive to SSH
VNC won't work since this is command line only. No desktop environment is installed.

Yep, this is a APRS digipeater. We have one at higher elevation for us to use.
