The fish is so fresh ,we get this fish where l live. But my son is fussy eats only selected fish. My fisher lady gives me two free and l fry it and eat it myself. When the fish is fresh it is more likely to get out of shape. If you have a big frying pan pat dry the fish with rice flour and semolina it will be crispy and not out of shape. Let it cook on one side only then turn it, flip to the other side.
