- Today we try two kinds of Korean noodles: Mul Milmyeon (물밀면) and Bibim Milmyeon (비빔밀면). These dishes are similar to Naengmyeon, however the noodle ingredients differ. While naengmyeon is made of buckwheat noodles, milymyeon is made of various flour such as wheat flour, potato flour and sweet potato flour.
According to our research, the milmyeon in Busan tends to have a soup base made with beef bone. The milmyeon soup base in Jeju Island is typically made with pork meat. Other regions might also dried anchovy for the soup base.

I really love spicy, savoury and creamy noodles! If I had to choose, I'd go for a mixture of spicy and savoury. You need that complexity of flavour for sure :P

I find the less spicy recipes in Korean cuisine much more interesting and challenging than the spicy ones, even though I love Gochujang! I can’t wait for the Streetfood vid to come out! 😀👍🏻
As someone who eat warm foods all year long even when the weather is super hot (I'm in Indonesia) I find it very interesting when I saw other country serve food with icy soup. I guess I have to try it out myself to understand why Korean loves icy noodle

when i was a kid growing up in nyc, moohl naeng myun was never sweet, more savory. it was perfect. but now everywhere i go moohl naeng myun is sickeningly sweet, like drinking honey. was i just eating the wrong naeng myun as a kid or have the recipes evolved? i cant eat moohl naeng myun these days because its always too cloyingly sweet. is pyongyang naengmyun the not sweet version? im so confused lol. help!
I believe a couple things are going on! For one, recipes vary upon individuals and regions. I haven't grown up in NYC, but I've noticed that Korean food in Seoul seems to have gotten sweeter and even desired (such as Dakgangjeong). From what I've heard, sugar and other ingredients were more of a luxury around the time the Korean War began. So food was less flavorful due to economic reasons. These days, sugar and seasonings are much more affordable. Many restaurants add more flavor to attract customers. Sugar can be addictive and some people love their food sweet. I personally prefer savory over sweet, so I totally understand your sentiments. Pyongyang Nengmyeon tends to be more mild, so maybe that will be favorable for those who do not want sweet noodles.
