Yeast is not optional l,if you want alcohol you need yeast. Because yeast makes alcohol by eating sugars that is the food to yeast to make alcohol and bread yeast will work fine you definitely need sorrel I guess the spice optional but if u want favor I suggest you use spice you can fine yeast at Walmart ,keyfood, grocery stores in the baking ale
I make sorrel wine, now on my 2nd batch. She is on point with everything in the beginning but left out many steps. The sorrel is not ready to drink after 2 weeks. At 2 weeks it is still fermenting. To ferment the wine does not have to be in an air tight container, it needs oxygen mixed with the yeast to eat the sugars to make alcohol. At about 2 weeks the wine can be strained into a carboy with an airlock. From that point, the wine will let you know when it's ready to drink. There are many, many ytube channels to make wine. That's how I learned.

Follow this recipe. On point. Just add an airlock and stir every couple of days. Taste great!
