    Thank you for the detailed review and video on the signals. I just bought one for myself. I don't do much BBQ (since I live in Canada where it's too cold most of the time) but I do long braises ALL the time. And that is something I do want to mention. What probe would I use for Braising?
    The product, in general, seems to be marketed towards smoking and BBQing (dry) rather than braising or Sous Vide (wet). Between talking to a thermoworks rep and what they have on their website, it seems like the probe itself is ok to be submerged but given the inside of a pot during braising is usually a very damp environment it'd be tricky to not get the whole thing wet. Their website suggests using the longer straight probe for submerging so you can keep the rest of it out of the water, which would work. They also have a waterproof high temp probe, which isn't rated for all liquids but should be OK? All in all, i found this very confusing. So far I've settled in on the high temp waterproof probe for the meat itself and the regular probe that comes with the signals with just the probe going into the pot to measure the liquid? would that work?

    My dream cook would be a Large 3”, 2 lbs. tomahawk steak, 2 lb. Lobster with drawn butter, a bucket of fresh clams, fresh garlic bread, Parmesan Roasted Asparagus, a side of abalone. Take me to the hospital! I guess I can dream. I’m just starting Barbecuing. I really haven’t done any research, but I ordered a Weber 22 in. Performer Charcoal Grill should be here Thursday June 8. I would love to have a Thermoworks Signals 4 Channel Wifi Thermometer. I'm ready to learn/try. Love you video. Thanks

    Thanks for the video. Well done! Ordered the signals and billows today. It's been on sale, but the sale ended Thursday. To thermorks credit, I called them today (Saturday) and they honored the sale price ($60 off). I'm installing it on Char-Griller 980. Your video really helped!

    I use a SmokinTex commercial smoker. I smoke several briskets at one time and since each cut is slightly different the Signals multi-probe thermometer would be an outstanding way to maintain a premium cook.

    I love my charcoal offset smoker, even though it's a cheap Amazon one. It's amazing how great of food you can get for an inexpensive setup. This thermometer paired with the Bellows would make it that much easier to do all-day smoking. If I had it, I would do the best briskets-giving my in-laws have ever seen. Smoked turkey, ribs, and brisket, all from different local farms, with the fourth channel controlling the Bellows. I've managed to do ok with the iGrill2, but the BT connection doesn't reach my office, so the Signal's WiFi connection would be a nice bonus.

    I’m pretty new to smokers (I only bought one couple months ago) so maybe my dream isn’t the best but I would love to cook an amazing Christmas turkey on the smoker. My family’s main oven broke and so there’s only one working shelf remaining which means my parents are depending on me and my smoker this Christmas. Maybe if it turns out well they will trust me in future with some fancy cuts such as a rib roast and a lamb leg at Easter - that would be amazing for sure!
    With regards to American-style bbq, I’ve watched videos recreating Franklin brisket with beef tallow and his supposed secret rub - with a thermoworks signals I would relish this challenge :)

    This is one of the best videos I have EVER watched on UA-cam. Straight to the point, Answered every question I had, Very clear, No music in the background, Mentioned every accessory, and I can tell you thought of the viewer vs. yourself when making an outline to create this video. I liked, subscribed, and clicked the bell within the first 7 minutes of the video. I may like and subscribe, but I rarely hit the bell. The Smoke X is not legal to own in the UK which is so disappointing and so I have to choose between regular Smoke and Signals
    Smoke is fine except only IP65 (not IP66) and its range might be iffy as it is not the Smoke X.
    Signals does everything except it is expensive and has terrible battery life

    If I recall from your review of the Masterbuilt Gravity Series, you had mentioned some issues with the Masterbuilt App, which allows you to control temp and set alarms. I've come to pretty much ignore the phone connectivity on the Gravity Series because I feel like the app is unreliable at best. How do you feel about the reliability of the app being used for the Signals? Also, Im wondering how the unit responds if you happen to be out of Wifi range (say I leave to run an errand during the cook) - would I still be able to monitor?

    • @TheBarbecueLab
      @TheBarbecueLab  2 роки тому +2

      Great questions. When it comes to the app reliability of the Signals, it's rock solid. I haven't had any trouble with it while I've cooked with it, and that's a good 15-20 times now. I rarely used it in bluetooth only mode, since I was always here at The Lab when I was cooking and there's wifi here. As long as the unit is connected to wifi, you have connectivity wherever you can get a wifi signal on your phone. I'll go to Sams Club, Target, the grocery, CVS, you name it, and I always have access to my temperatures on my phone. If I'm using the Billows fan to control temp, I can even change temp while I'm gone. If you're only connected via bluetooth though, you're limited to 95 feet and wouldn't be able to see your temps if there's not a wifi connection to the Signals.

      @@TheBarbecueLab Ive been eyeing the Signals since I came across one of your previous videos on it. The price is a little more than I want to spend at the moment (especially since there probably wont be any major smoking going on through the winter). However, Im thinking in the spring, I might have to invest in one of these, as I feel like it could really come in handy, both at home and for my Michigan trips I mentioned before. Thanks again for such a thorough review.

      @TheBarbecueLab  Рік тому

      You could do 3 Picanha roasts with what comes in the box, and monitor them all at the same time. In the box there’s an air temp probe, which is fun for figuring out what actual temperature your grill or oven are really running Vs. What they say they’re running. The other 3 probes in the box are meat probes, and you could even order an extra meat probe with your purchase to give the thermometer the ability to do 4 roasts at the same time. It’s a beast of a thermometer.

    So, I notice that you have a Memphis grill (which I have as well). Why don't you use the Memphis probes that attach to the grill computer ? I ask because I don't use them as I feel they periodically crash the Memphis computer - which has ruined cooks. I just gave up on them. I am wondering if others have the same issue - or there is another reason (accuracy ?) Great video - and thank you !

    • @TheBarbecueLab
      @TheBarbecueLab  Рік тому

      Hi Mike, I admit that I'm pretty lax using the Memphis probes compared to my ThermoWorks probes. I haven't had any problem using the Memphis probes like crashing the grill or accuracy issues. It's just that my wireless card ends up disconnected from my app when there's a new app version, and I don't always take the time to reconnect it. I should, but I usually don't think about it until I'm already into a cook and I don't want to mess with things. Maybe this comment is my reminder to head outside and sync the app with the grill again, lol.

    • @TheBarbecueLab
      @TheBarbecueLab  2 роки тому

      I like the Smoke X4 as well, and that unit will be the next thermometer we review on the channel here in awhile. We've got some other things coming in the near future, but next thermometer up is the Smoke X4. If I was actively doing competition cooking right now, I'd choose the Smoke X4 since there's not always wifi when you're out cooking who knows where. The 1 mile or so line of sight would more than handle what I'd need if I was visiting friends or turning something in and allow me to watch my temps while I'm away. Here at the house, I like the Signals since I just connect to wifi and i'm good no matter where I go. That's the immediate difference maker for me, but I'm just starting to use the Smoke X4.

      @scooter5940 2 роки тому

      I've probably used signals for 25+ cooks, and have had no issues thus far. That said, probes like this are most commonly going to be used in longer cooks, or during the initial stages of an indirect sear. As a result, they pretty much sit over the indirect heat where you would not have flare-ups. I can't see using them in a quick cook over direct flame where you may have flare-ups, such as in searing a steak, lamb or pork chop, cooking burgers, chicken wings, etc. I'd just stick an instant read in once in awhile.
