Tilapia fish oil was produced by the bioprocess for animal health diet by the fermentation of fish waste with starter powder of selected bacteria (R. palustris JP255). The optimal conditions were determined by Plackett-Burmann design method include of fish fragments (0.05-0.25 kg), intestinal and gastrointestinal tract (0.05-0.25 kg), brown sugar (0.10-0.40 kg), the number of days for marinate fish with brown sugar (1-3 days) (the volume was adjusted with clean water until the weight is 1.5 kg), adding starter powder (0.1-0.3 g), and the number of fermenting day (5-15 days). It can produce fish oil up to 380 cm3 and provide the 13.4% of antioxidant at 100-mg/ml concentrations. The highest antioxidant activity with IC50 values of 1,461 mg/ml and total phenolic compounds was 292 mg gallic acid/mg. The fatty acids were detected in fish oil include of lauric acid, myristic acid, palmitic acid, palmitoleic acid, stearic acid, arachidic acid, and furan fatty acid. In addition, omega fatty acids were detected. Oleic acid (omega 9) was found to be the highest at 35.50%, followed by linoleic acid (omega 6) at 13.88%, and linolenic acid (omega 3) at 2.75%.
