People are far too scared of saturated fats and sodium. People spout off and demonize foods like butter and eggs for their cholesterol without realizing that such foods also have choline and numerous vitamins and protein. in my country, some people are allergic to egg, peanut or to seafood. Will there be a restaurant or cafe that will solely make their menu to cater to their allergic? I dont think so because they are too small of a market..

thats because of market sizes, the US has more than 10x the population of oz so markets are much bigger with bigger valuations and revenues
