I must be Jamaican, I clean my chicken just like that. Rinse, yucky parts removed soaked twice last time with vinegar. Looks delicious. I like some beans and rice with that!

This is fire chef. I personally add OJ , ginger , nutmeg. Bake it a lil then grill it keep the marinade and mix with bbq and ketchup for a sauce. Sprits with beer on the grill during cook. 🔥
We grew Scotch Bonnet peppers this year and have made both jerk chicken and pork shoulder all summer. Both on the grill and in our barrel smoker. Found sources for pimento wood and wow. Incredible! Great video! Will have to check out those seasonings online.
