This is one of my favourite videos of all meal times because I love ramen and gyoza. My all time favourite meal is simply noodles, dumplings, sliced veg and an awesome broth. You can change up the flavour with sauces and spices. I can't get enough!
Eric, late comment but I wanted to mention that when a broth like his is strong/salty, it is meant to be eaten in conjunction with Gyoza. For example put the gyoza into the soup and let it absorb a bit of that flavor. It’s salty so it can flavor other things you eat it with!

I got to try the raw egg on rice by accident on my last trip to Japan lol My sister and I went to a breakfast buffet at our hotel and she thought it was a hard boiled egg. She was shocked when she cracked it at the table (I had warned her before we went in that its common, but she never listens). I was the one with the bowl of fresh rice tho and just had her dump the egg into my bowl, then I just copied the locals there. I actually really liked the taste surprisingly, the slimy texture on the other hand ... lol. my sister refused to try it and could barely watch me eat it, fun times
One is sleep which I guess is stay at home two is inappropriate for the channel. Gyoza done right is amazing. I usually get them, beijeng beef, szechuan chicken, and wanton soup. None spicy enough but good. I don't know how traditional they are though. I could be just Americanized palleted food. Love your channel and I definitely love the raw egg deal

I think the (taste) problem with eating raw egg is the whites, the yolk by itself is perfection on everything. So most of the time I make onsen egg where the whites are just barely cooked but the yolk is just warm but runny. I have also seen the whites completely removed in some preparations of Japanese dishes.

You really have to mix it into there, like you are making cookie dough and mixing butter and sugar together. the egg needs to coating each grain. I think once you do that you might like the raw egg better. You are suppose to slurp your noodles. the act of slurping passes air over the noodles as you eating them and cools them off enough. It's not considered rude to slurp, its a requirement in Japanese ramen etiquette.

Hey Eric, regarding 4:50 was it the gooey texture of the raw egg that didn't agree with your taste buds or was it that combined with the soju? Arguably this type of runny/gooey texture is very difficult for a western palate.

Love ramen & gyoza! As for the egg & rice, we ate it growing up but the rice has to be piping hot to cook the egg alittke. You can mix it & cover the bowl for a couple of minutes so the egg cooks. I guess I'm Japanese! 😃👍👍👍❤❤❤
Hi Eric, after watching the Japanese series Midnight Diner- Tokyo Stories on Netflix, it's great to see first hand all of the great dishes that are available in Japan (and other places in the world!). The noodles in this episode look really good- I may and see if I can find some for dinner tonight!
Eric, have you tried having raw egg with hot pot? It's used as part of the dipping sauce, pretty common with southern china hot pot. It makes the cooked meat more silky soft. You should try it out sometime.
I enjoyed the different types of gyoza! Looked delicious ! I think if the egg was separated and you only had the raw yolk over rice it wouldn't have been so bad. Raw egg white has a harsh consistency, which for the western palate is difficult to swallow. Thank you for the heads up! The ramen looked good. What was in the broth that it wasn't clear? :) get some!
I cant even eat a hard boiled egg, let alone raw! But if I ever get to Japan....do as the locals. I'll try anything once (friends talked me into sushi a few weeks ago, love it now!)

the raw egg and rice is actually very good. it’s common in hk diner foods. try it with minced beef or pork, stir-fried with oyster and soy sauce.

I think it would help quite a bit with texture if you thoroughly mix the rice with the egg and shoyu and if possible, add some spice
