If you look at the shoe, they have it split in half (only half of the decks played before shuffle) This basically completely defeats card counting as there’s no way to tell what any of cards in the other half are. This is called half shoeing, pit bosses will sometimes do this instead of backing off!
I mean you could but the difference it would make is pretty minimal. However you could technically guess the probability of it being a suited or not by looking for how many low or high cards have went, even if its not statistically accurate
