Scooped ice cream and decorated cakes for four years. Massively strong forearms.
It you want a moist fluffy cake, mix the wet ingredients first and froth them up then gently fold the powder in. Just until you see no more powder. Over mixing causes gluten which is tough. Also you can substitute applesauce for oil for less fat.
