      I need to use an oven also. No grills allowed here. I use F, not C. What temp did you use and how long, please? I believe his 4kg pork belly? is about 8-9lbs. Is that right?

    Great cook. I checked out your seasoning, very nice. Will add that to my rub collection. Your bbq looked very similar to a Webber kettle bbq made in the US. Everything you did was great. And I feel over the grill in a bbq is best but I agree with you it can be done in a oven. Another way is to fully cook in a smoker, then finish with high heat in a bbq or the oven giving it a great crust on the skin. My favorite method though is using a Rotisserie in the bbq. The constant rotation helps to baste the meat the entire cook with no need to raise the temperature at the end because it especially getting both basted and seared at the same time.     Looks awesome but can you roast in the oven and at what temp.?

      I put my oven on roast at 350°F. Are use a thermometer and cook until the inside is 130°F. Turning it every half hour or so. Then I let it rest after it’s done until the thermometer goes up to 140 or a little above before I cut it. It Will continue cooking out of the oven.

    Well done sir! Your environment looks nice,you could grow anything there. If you are using a phone to do the videos, use Filmic Pro to control the white balance and focus - you had some difficulty in the beginning. 👍🏻😋

    Celsius to Fahrenheit is (x 2 + 30). So 150*C is more like 330*F

    Does Curing (salting), drying, or smoking meat alone kill worms of trichinellosis?

      ​@@Spectacular-cuoredicioccolato thanks for the reply. I was actually referring to some of your other recipes. Does the drying and Curing safeguard you against the trichinellosis worm. I mean some of the bacon and dried panchetta recipes I have seen cure and eat.

    Thanks for your porchetta but traditionally it includes the pork loin filet, which means having a whole side of pork and may also mean doing a bit of butchering as not all butchers cut up the animal in the Italian way. Personally I think it's a lot easier/better to cook it in the oven due to the long cooking time, easier to control the temperature.

      Traditionally it's done whole hog by the street vendors in Rome like he said. That means the cuts are actually not all that important. He was being very responsible to suggesting what he did. This is a wonderful pork roast with a great deal of variations possible.

      No, perfection. Today you can buy quality meat and pork can be pink. No need to cook till it is grey and white and dead in a whole other way. Be sure you buy your meat from quality prividers.
