    I love Thomas Keller, with that said, we know you folks can plate well. why not teach what your doing and whats in your mind as your doing it?

    The tweezers are killing me. I understand the delicacy but there must be another and better way.

      Edward Lee no, There isn’t. We need precision in plating. The only other option is chop sticks, which work very well but are hard to master for plating.
