Here are some confirmations-corrections-suggestions based on this video :) 1. varaN-bhaat - literally means cooked toor daal + cooked steaming hot rice. varan is what you have cooked here so perfectly :) varan can be of any lentils but toor daal being the most commonly used in Indian daily meals, varan usually means cooked toor daal. You got it right; we do not add ginger to any daal. It is only for sabjis. Ginger-garlic paste is usually used in non-veg and dishes involving onion. Maharashtrian (MH) veg cuisine is not oriented around onion-garlic gravy bases. So, you need not feel that your version is not authentic, in fact it is the exact reason why you liked MH cuisine so much, it basically does not involve onion-garlic in general :) As you said, we substitute it with Hing or Hinga in Marathi, last schwa is to be pronounced and not to be omitted like in northern languages. bhaat - is cooked rice. That you actually missed in this. varan with tadka is called aamati / aamabat(tangy) varan. varan and bhaat are to be mixed together (by hand and not spoon) with a pinch of salt, lot of ghee and a squeeze of lemon and to be had popping hot !! :) That's a meal in itself. Batata (potato) sabji - Wow, it looked authentic and delicious! Lemon rice - The video you referred online, it's title said Lemon Rice IN Marathi, the presenter was making a video in Marathi language OF a Tamil dish. However, the recipe is authentic Tamil lemon rice recipe that you cooked and liked. :) My husband is Tamil, so I know it for sure. The tadka is different in southern states, as you have shown, they add udid daal n chana daal in stead of jeera, we never do. But yes, MH people we add roasted ground nuts in many dishes, also we add dried coconut to many gravies and usals. You should explore usal, a runny curry variety entirely dedicated to lentils (soaked and then sprouted) which traditionally does not include onion tomato, so you would like its mild sattvik flavour. It is to be had with rice as well as roti just like any daal or loose gravy. In online videos nowadays you will find onion-tomato added to usals too, but just ignore it, they are just pleasing to a larger crowd by altering the traditional recipe. Onion-tomato and ginger-garlic paste combo is typically from North India, not found in southern and western part of the country. Although with popularity of northern gravies, people across other states have started putting it as curry base for traditional dishes too. That's why you were surprised not to find ginger in the daal recipe ingredients :) Though, ginger is used in popato subjis as you did, also it is part of common fresh coconut spice paste used as base of any loose gravy-rassa in Marathi. In Marathi only suji halwa is called as shira, other ingredients' halwas are called as halwas like gaajar halva ie carrot halva, dudhi halwa ie white pumpkin halwa n so on.. 2) you prepared half the dish, make plain rice and mix varan with it (+ghee+salt+few drops of lemon juice) n you get varan bhaat.. Traditionally daals, sabjis will not have onion-garlic in general. Only specific dishes would have them. In priests communities many households still do not eat onion garlic. But on the contrary many have started eating rajasik, tamasik food in newer generations. That's also reality. I am an ordinary cook, as I wasn't cooking per say before getting married, after the wedding had to learn Tamil cooking in Tamil household; so mine is actually hybrid :) After learning 17th chapter of Geeta , I have become more aware about sattvik, rajasik n tamasik food.. I had a very bad experience in house help in pune.. in South India it was easier for me but I heard that it's getting difficult even there.. Maids prefer working in factories OR As salesgirls rather than house help.. and in my personal experience they exploit if the employer is old and ill.. Yes, zunka bhakri is one of the first Maharashtrian dishes recipe that came when I was researching but there was lot of onion and garlic. I will have to find one without it and yet still authentic 😊
I never use onion and garlic in my cooking, becasue whatever I eat I offer to Sri Krishna first 🙏🏻 But when I visit my mom sometimes (rarely though, she knows my diet) she will put little onion in some preparations and I accept becasue she cooks with so much love for me that I don't want to hurt her feelings 😊

I had a very bad experience in house help in pune.. in South India it was easier for me but I heard that it's getting difficult even there.. Maids prefer working in factories OR As salesgirls rather than house help.. and in my personal experience they exploit if the employer is old and ill.. Do u never eat onion garlic or for offering u do not put?
I never use onion and garlic in my cooking, becasue whatever I eat I offer to Sri Krishna first 🙏🏻
But when I visit my mom sometimes (rarely though, she knows my diet) she will put little onion in some preparations and I accept becasue she cooks with so much love for me that I don't want to hurt her feelings 😊
