  • Biscoff Puff Pastry Cheesecake Recipe
    Ingredients:
    1 sheet of puff pastry
    1 egg (for egg wash)
    200g cream cheese
    1 heaping tablespoon Biscoff spread
    2 tablespoons icing sugar
    300ml double cream
    Extra Biscoff spread (for melting and drizzling)
    Crushed Biscoff biscuits (for topping)
    Instructions:
    Prepare the Puff Pastry:
    Preheat your oven to 200°C (392°F).
    Cut the puff pastry into your desired shape.
    Place the pastry pieces on a baking tray lined with parchment paper.
    Brush the pastry with egg wash.
    Bake in the preheated oven for 8-10 minutes, or until puffed up and golden.
    Remove from the oven and let them cool completely.
    Make the Cream Filling:
    In a bowl, combine 200g of cream cheese, 1 heaping tablespoon of Biscoff spread, and 2 tablespoons of icing sugar. Mix well until smooth.
    Add 300ml of double cream to the mixture and continue to mix until the filling is smooth and creamy.
    Assemble the Cheesecake:
    Once the puff pastry has cooled, cut each piece in half horizontally.
    Fill the bottom halves with the cream filling.
    Drizzle melted Biscoff spread over the cream filling.
    Sprinkle crushed Biscoff biscuits on top of the cream and melted spread.
    Place the top halves of the puff pastry on top.
    Drizzle more melted Biscoff spread on top and sprinkle with additional crushed Biscoff biscuits.
