That is because symbols, brushes, and graphic styles save to the file you created and used them in, unlike Photoshop which saves them universally. To access them just open the file you created them in. Or click on the library icon on the bottom right of the symbols panel, select other library, and navigate to the file with the symbols to open them in the new file.
