That “cruncher grip” (I think that’s what you called it) at 2:06 is called a pinch headlock in Jiujitsu. It’s mostly used as a way to sweep the opponent when your in the bottom position.

From a leg attack (double or single) or from an underhook. I’m going to post a video with Kyle Dake and Zhumashbek Uulu because they’re really good at it

You bring up such a great point in this video. When you can't impose your will, take what they give you. That was one of the best pieces of advice I got to help my kids progress over the last few years. Even the young age groups are progressing so fast now. They're getting so good so fast now.
In part because of great content like yours !

I coach a series from the cruncher grip but I teach bringing your hands straight down to create pressure on the back of the neck.
From there the first option is what is shown in this video except it's more of an explosive jumping to the side, pulling the head down, and lifting the underhook. An uchi mata finish can be used if the opponent is stubborn. I call this move a corkscrew. If you don't keep your shoulders higher and level with the mat, then you're susceptible to a head and arm.
The second option is if the opponent straightens up to counter the downward pressure to the back of the neck, duck to the underhook side with either a mat return finish or a near leg back trip keeping the now head and arm. The trip is kind of like a osoto gari or osoto otoshi.
The third option is if they step back to avoid the duck under, then hit head and arm by blocking the underhook side leg like Demas often did, do a sag head and arm, or do a deep step through flamboyant head and arm throw. The Demas version, if done explosively, may be called a slam in HS, so I prefer to emphasis the sag head and arm finish.
Lastly, you can always go back to the first option, especially if they step back or crouch to avoid options 2 or 3.

I’m pretty sure when they made the 3 point takedown they changed the 4-point nearfall back to three. I could be wrong so please correct me if i’m wrong

It’s still 4 for 4 seconds. What they did was add a 3-pt NF for a 3-count as well
