Just a tip: you can cut the jolly ranchers in half with a simple pipe cutter and then they don’t end up so big. Good tutorial btw!

We love them! It's hard not to just sit and eat them all. We also give them out as Christmas gifts and they are a hit.
O2absorbers May ruin candy in mylar bags. You are better to use a dessicant, moisture absorber. Also for short use it isn’t really necessary. Glad you are enjoying your freeze dryer!
I've heard this as well. Our candy is typically for our family and will be stored a bit longer. Haven't had issues with the oxygen absorber but I don't add it to other candies, just my jolly ranchers. Thanks for sharing
However if you open and close the bag a lot the O2 absorber will help. Because water is H2O, the oxygen removal also removes the moisture. Because it’s no longer water in the air
I think O2 absorbers are single use; dessicants absorb moisture. You do what works for you though. Thanks for the video!

We just warm our candy on the trays for 20 mins in the machine

We didn't unwrap and use all the candles. The bag just had a lot of Grape this time.

How long is the shelf life for freeze dried candies?
With this candy, I'd say a couple months at most. They tend to start getting chewy again in about 2-3 months, in my experience.
Save the oxygen absorbers, they are sugar. You don’t need to add anything with the candy. They are sugar candy not normal food that will need oxygen absorbers.

No they don't have to stay frozen. It's just part of the process that they get frozen in the freeze dryer. There is a vacuum seal on the freeze dryer which helps the process of drying and removing the moisture. They can stay on the shelf for several months if stord properly.
As for our electrical bill, it does go up. It doesn't seem to be a huge increase. But we don't constantly run our freeze dryer all year round. During the harvest it will run it several times a week. But usually it is much less the rest of the year. If you were to have a freeze drying business, your electrical bill would definitely go up because you would be running your freeze dryer constantly.

Are they supossed to be slightly tacky on the outside, or completely dry ?
They should be completely dry. They crunch. If they are still tacky, they didn't freeze dry correctly. Although they still taste yummy

@@cathyl4622 let me know if it works better for you. Sometimes you have to adjust your heat and go just a little bit higher. Each of the machines calibrates a little bit differently.

Skipped the tray warm screen... Do you prewarm them or not?
I do not prewarm them other than the warm tray screen for 20 minutes. Others have, but I can't speak to that.
Is your freeze dryer a 5 tray or 4 tray? I have 5 tray & wonder if they would hit the top of the trays while freeze drying.
We have 5 trays. I've never had issues with them puffing up and hitting the top.

I actually called the company directly, saved money doing it that way and also asked if they would throw in an extra set of trays, which they gladly did. They also delivered it right to my house. So, for me, that all worked great.

Still a bit new at this FD. First time doing candy going to do Jolly ranchers skittles and some salt water taffy. Can I get some info on what to put my temperatures on at this point I have for a dry temp 145 and extra drive time three hours and it’s in candy mode and -10 initial freeze.does this sound good? Also how long will the total hrs be all together
Because you're doing candy your initial freeze would be zero because you're not going to freeze your candy. Temperature should be to 145° and you can have 2-3 hours of extra dry time. You should be set to go. You may find with your machine that you need to lower erase the temperature based on the actual candy. Sometimes my jolly ranchers like a little hotter temperature then say my saltwater taffy. There may be a little bit of experimenting as you start out.

Did you freeze in a freezer before you freeze dried them?
Nope. You don't need to freeze them at all. They go through the candy mode which only runs heat and no freezing. It is the vacuum freeze pressure and heat that causes them to puff up.

Mine puff up but they feel sticky on the outside… is that normal?
Ours usually puff up completely and are fluffy throughout. You may need to try increasing your heat another 10 degrees and set your dry time to 4 hours

I made them myself using Canva. Super easy and I can print right from home on sticker paper.
135 is a much better temp for jolly puffs! 145 is just a bit too high we've found.
Glad that works for your machine. We have to go high or ours don't puff up all the way. Funny how each machine is just a little different.

I have been doing it with the big green and the globe grapes for years . Lol we just called them frozen grapes. 😂 they are so good. I have been talking to a gentleman that is selling them here in our town. It’s like 1.50/2.00 per oz. I was really fizing to place an order.

This unit cost is ridiculous. Not everyone can afford it.
True they are very expensive. But we each choose how we spend our money. In our home, this was a great investment because we preserve a lot of our harvest as well as meals this way to use throughout the year. Candy is just an added perk for us. However, there are many people who make a full-time income making freeze dried candy and that supports the cost of the unit.
That's true....but I consider all the food I would be throwing out or putting in my freezer and then throwing it all out later down the road.... Monetarily worth having!!!
I agree...but I've recouped most of the cost, buy selling my candies, fruits at local farmers markets..
