Because I feared contamination, I have never incorporated anything into my brew that couldn't be added to the boil. I think I've kept myself chained long enough. However, I will take Steve's advice and do this with tangerine juice instead. Thanks for the inspiring video.
Glad you liked it. I think in this case, we're pretty safe. The juice was pasteurized, and I added it to the end of the boil, so it was in the pasteurization range again for a time in the kettle. I've done this technique two or three times now with no ill effects. Let us know how your tangerine version turns out. Cheers! - James
HyllustheBarbarian Keep in mind that beer has a much harder time getting contaminated post-fermentation. I've added all sorts of stuff into the fermenter, secondary, and when bottling and have been fine. Once there is alcohol and/or beer reaches a pH of 4.5 or lower, contamination issues problems lessen by a lot. The critical time to be careful is when chilling before pitching yeast.
Going to take a stab at this for my next brew. I love beer with grapefruit aroma and simply cannot seem to get there with hops alone like some commercially available beers. Since this is an older video, I’m interested to know if you’ve attempted this since and if you amended the recipe based on the results. As always, thanks for the videos.

Thanks James. It's been 2 weeks since I pitched the yeast. There seems to be some CO2 still bubbling up at very slow rate. May need to take a hydro reading to confirm all is well before bottling. Thanks!
A technique I use for fruit beers is to just use the fruit juice to carbonate the beer, because I find if you just add it to your fermentation the co2 eliminates a lot of the fruit Aroma.
However, that only goes for weaker tasting fruit like cherries or strawberries. Raspberries, grapefruit or Passionfruit have so much flavor that you wont need to do that
5:25 Your ahead of your time... Thanks for the statin warning. But 1 Qt of GF Juice to 6 Gallons, would there be enough of reaction if you limit yourself to a couple beers at a time. I can't believe this video is over 3 years old.

We’ve been making tinctures with vodka and citrus zest. It’s less sweet than juice on my palate.

How long did you keep in fermentor after fermentation complete? Any secondary fermentation?
I rarely transfer to secondary anymore. A couple weeks in primary should be good, if fermentation is complete. - James

Cool. Of course, you have to make sure the sugar level of the juice is not too much. There is a risk of overcarbonation and bottle bombs. - James
