That's a big wheel maybe 36 inches. I think the shorter cranks probably help him get up hills with such a big wheel. He keeps a really quick pedaling tempo. I think he's got the fast twitch muscles.

Indeed. Also often with a bigger wheel there is longer travel so less control, shorter cranks allow for more maneuverability

It’s better when they are short like that for a big unicycle.. it allows for faster rotations on the wheel given that its 36 inches

I ride a 32 inch unicycle and it's fast but not this fast. I like things at a much more relaxed pace.
