Prepared by - Mr. Julius Lewis Kannada kudru/Santhekatte
Dish #1 Crab Sukkein
Ingredients
(For Pood-Powder)
Red Chillies - 10
Coriander seeds - 1 Table spoon
Jeera Seeds - ½ T Spoon
Mustard Seeds - ½ T Spoon
Black Pepper - ½ T Spoon
Turmeric Powder - 1 T Spoon
Boiled Rice - 1 T Spoon
Split Bengal Gram (Chana Dal) - 1 T Spoon
Split Black Gram (Urad Dal) - 1 T Spoon
Curry Leaves - 2 Pods
Roast All the above and make a fine powder and keep aside.
Other Ingredients:
Crabs - 4 to 5
Onion Chopped - 1 Big
Tomato chopped - 1 Big
Crushed Garlic - 4 to 5 cloves
Coconut Oil - 3 Table Spoon
Scrapped Coconut - ½
Tamarind - 1 marble stone
Coriander leaf for Garnish and Salt as per taste
Method:
In a vessel heat coconut oil and add the crushed Garlic and fry till slight golden and then add Bay leaves.
Add onions and fry till translucent.
Add tomatoes and fry for 2 minutes.
Add the Crabs, tamarind water and salt as per taste.
Mix well and cover a lid over it and allow it to boil for 10 minutes.
Now add the coconut and powdered Masala (Pood) and mix well.
Cook for 2 more minutes and switch off the flame and garnish it with coriander leave.
Dish #2 Kalwa Jeera Meeri
Ingredients
For Paste
Pepper Corns - 18-20
Cumin Seeds - 1 T spoon
Green Cardamom - 1 Table spoon
Cinnamon - 1 inch
Garlic Cloves - 5 big
Turmeric powder -1Tspoon
Make a paste and keep aside
Other Ingredients
Kalwa - 1kg
Green Chillies - 3
Tamarind- 1 Marble stone
Onions chopped - 2 medium
Tomato Chopped - 1 Medium
Vinegar - 1 Table spoon
Sugar - ½ T spoon
Salt to taste
Method:
Marinate Kalwa with Salt and keep it for a boil in medium flame till water comes out of it. After it cools down drain the excess water and keep aside.
Heat oil in a deep pan and fry the onions until translucent.
Add tomatoes and fry them till they turn mushy.
Add green chillies and the paste we made before, Sauté the masala until it turns dry.
Add the tamarind juice and mix well.
Add the vinegar, sugar and half cup of water and bring to a boil.
Now add the Kalwa and mix well. And boil in low flame for 5 minutes.
Add salt, sugar or vinegar if required.

Kannada kudru is known for its sea food. Be it kalva, crabs, khube or any other fresh river fish; it is available here in plenty.
The programme is well presented. Plus Julius comes from a family which is very renowned for its culinary skills.
After vewing the programme, my taste buds have been rekindled and will definitely plan to visit Kannada Kudru soon to savour the sumptious dishes.

Navayathi konkani
Kerala konkani
Karwar konkani
But a konkani can understand all of this dialects ... Lots of love for amchi konkani ❤️
