I have been watching for a while and love your videos. Over time you have gotten more professional, but I still love your homey presentation. Time? When you are visiting friends, you pour a cup of your favorite beverage and have a cozy time. I don't mind the longer videos. You have great explanations when you are cooking that explain what is happening and that is important to me when experimenting with new ingredients. As to the Keto Chow, the price difference is more, but the KC also have all the vitamins and essential elements that you need for a meal replacement. So I think when I use them for a meal replacement, I would not have a problem with the cost. They have just come out with a gingerbread flavor that people in the US are raving over.

Your spice blend is spot on and I've been using it in everything, especially coffee. The flavor here is amazing and it's just what I needed. This past weekend, I had been baking for my kids our family ginger cookie recipe. I did not partake as I just don't wish to go back there. The smells were heavenly though and I was sorta jealous! LOL! No longer, now my husband and I can kick back with the kids and enjoy all the flavor too! Thank you for all the you do!!!!!!!!!!!!!
Public Service Announcement: these are yummy made with the apple pie flavor and plain cinnamon, too 😋 I add a splash of lemon juice whenever I use apple pie to "up" the fruit flavor and I haven't had a problem with it curdling the KC.
I just got my keto chow gingerbread!! I will try your recipe soon. I am on the hunt for crispy thin gingerbread cookies. I like them spicy, so I was thinking about adding extra ginger and nutmeg. Your videos are prefect! If I don’t have ally of time, I speed the videos up.

I did the recipe times 4. I only used 2 packages of Gingerbread keto chow and then used 3 different protein powders evenly divided in place of the 2 remaining packages of keto chow (I did 4x the recipe). I divided the protein powders among Quest Salted Caramel, Equip vanilla, and Isopure unflavored. I think I need to play with fewer eggs; quadrupling the eggs made it too runny, which I saved with some coconut flour and pork panko. I think more like 5 to 6 eggs for a 4x recipe will work. I did add the xantham gum, but perhaps I need to half that since I am using 2 packs of keto chow. I also used half brown swerve and half golden monkfruit. I just have to say these are wonderful gingerbread cookies. I have tried the Keto chow recipe for gingerbread, and they have that sort of funny protein powder funk going on. But these are great. I like using the blend of proteins as it masks the protein powder thing. I have also done this with Pumpkin Keto Chow. I spray the bottom of a flat glass with coconut oil, dip in golden monkfruit and flatten the cookies some. I also like to add 2 tsp of minced ginger,either fresh or jarred. Anita, your cookie recipes are the best.
wow, I love that! It's also a bit of a cost savings too I think to spread out the Keto Chow usage like that! The eggs make sense because the other protein powders would need less liquid in the mix! Great save though! Thanks for sharing!

May I make a suggestion...when using your lemon squeezer, put the lemon in flesh side down. I know it seems backward, but it works, and you will get more juice. There are holes in it so you won't have to turn it on its side, the juice will just come out the holes. I could probably eat six of those cookies for breakfast with coffee, especially after fasting 16 hours. They look deeeeelicious! I'm going to have to save up and get me some Keto Chow. Just made the Keto Chow version right after I viewed your video. My new favourite breakfast. I had a large salted caramel Keto Chow which I used (saving the eggnog for 'adult eggnog' for Christmas Day). Very good, especially the spice mixture. Pre-Keto days I loved a bagel or cookies with my coffee for breakfast. Now I can have healthy cookies. Like also that it makes 6 only. So, so easy to make. I have the muffin top pans also. I used the Swerve brown.

I love the new silicon baking cookie sheet with the lip. It is much more versatile having the lip on it. I need to make the lemon in the Royal Icing next time I make the gingerbread cookies. Mom's lemon tree is loaded with ripe lemons right now. I love lemon in gingerbread cookies and mom used to put lemon curd on her gingerbread loaf too
I made the version with Keto Chow tonight and it was great, but I did prefer the one I made with the protein power flour made from the PSMF bread. I remember the first time he asked for it (Mom didn't make it) I thought "What an odd combination; gingerbread and lemon, but the taste is amazing! I made it for him every Christmas afterward. His was more of a cake and cooked custard, though. I'm looking forward to trying these! My cookies are usually pretty rustic looking. I took Wilton cake decorating classes years ago, but I usually don't have the time to doll things up. 😂 Besides, IMO taste is what matters most.
Yes, the lemon glaze was the thing at our house. Now my coworker says in Eastern Canada they spread butter on their gingerbread cookies. I tried that and I have to say they are onto something! What a very keto thing to do!

Anita I trailed your biscuit recipe - I found brown sugar sub (300grams) on special in the supermarket for NZ$8.99 - I did vanilla with white chocolate chips on top , chocolate with milk chocolate chips on top (keto), Ginger nut and I found in my store I like going to they now have black current whey protein so I made that as well with white chocolate chips on top - I am now waiting for them to cool and see how they are - they don't look fudgy more cakey so will have to look into that further - I used the recipe on your website - Cheers
I can buy Gingerbread spice mix without sugar here in Germany, sadly it has cloves in it. I buy Ostmanns Gingerbread Spice aka Ostmann Lebkuchen Gewuerz. I use the same spice instead of Pumpkin Spice in my bulletproof coffee I drink 4 days a week 🥰

wonderful recipes! I have Isopure unflavored and looked at the vanilla on Amazon. Vanilla has cane sugar as the 2nd ingredient! Eeek. I guess I will check sweetness of the cookie before cooking, just in case. I finally ordered KetoChow and will try that recipe when they arrive to compare. I'm also glad it only makes a small batch.
Oh! Love your Lebkuchen, and can’t wait to try it with the keto chow. I think the length of your videos is always perfect. And the chapter notation ms will be handy when I come back and watch while baking your recipe. Carolyn from All Day I Dream About Food issued a warning not to use allulose, so I was afraid that might happen (although that might apply most strictly with egg-white meringue-style cookies, they are just goo!) Hey Anita, great video! The chapters are a great idea, but if people are just interested in Teddy, then they are missing out on all your wonderful ideas and insights. I watch ALL your videos to the end. Unfortunately over in Europe we can't get access to a lot of these powders like Keto Chow etc. so I have to substitute as best I can. I also don't like using a lot of the sweeteners as they're not great for us even ones that are supposedly natural like Xylitol. So I just use raw honey if need be.
Thanks for another lovely cooking video. You remind me of my mom and sisters. They baked on a regular basis and were very down to earth, practical cooks. And now I can find Teddy on demand! Just as an FYI, I don’t see that Keto Chow has xanthan gum in it, it does have acacia fiber; which is also a thickener. Generally, if I want a crisp cookie, I use an erythritol based sweetener. If I want a moist, chewy cookie, I’ll use an allulose based one.
I wonder if you mix some granular sweetener with a bit of food colouring and let dry if you could use that as sprinkles. Or use salt and Colour that if like me you like the added salt.
Yes, I was going to look into how I could do this! I used to decorate mine with red and green sprinkles that basically looked like colored sugar crystals
Ordered my Gingerbread keto chow today. Going to make a batch tomorrow using my pumpkin. I ordered the chocolate mint also. Regarding the cost of Ketochow - with any product you like but are having trouble affording, READ THE INGREDIENT LIST - Ketochow is just powdered milk protein, electrolyte/mineral blend/vitamins/a tiny amount of thickeners and the flavorings. You can make your own and you probably already supplement with vitamins - the electrolytes are a little more complicated but doable with some research. KC just raised their prices and even though money is not an issue for me, I still resent the price points. You're paying a lot for the convenience, especially if you're still having to add the fats too.
That was very interesting. I have always made Dr Oetker Lebkuchen, with the lemon egg white icing. Now that I am keto, I will give yours a try. Don't have Keto chow here in Austria so will try the protein powder and probably add some almond flour. The best thing was always that the flavour improved with time as the cookies softened. You really should try aniseed in your spice mix if you can tolerate it 😊
I grew up on Dr. Oetker products! I like the addition of the aniseed, not sure if it's an issue or not so next time I have a chance I'll try a little bit.
I loved making them as a child and with my children. The 1979 German home baking book I use only has cinnamon, cloves (sorry you can't do them) and ground aniseed. (1/2 tspn) Always packed a lovely flavour punch 😋

Have you tried apple cider vinegar for acid reflux? Many have eliminated that condition with that home remedy. Serious Keto discusses this in one video.
That is exactly how I weaned myself off the meds I was on! I am so grateful to be off the meds but I don't think the sensitivities are ever 100% gone. I still have to be mindful of certain ingredients. I think even Steve at Serious Keto would say that he probably has things that like that too that he has to watch for.

With the unflavored protein powder I would maybe add more vanilla extract and more of the gingerbread spice mix. The collagen definitely adds some softening and chew, but in the past I have used Knox gelatin instead. You could leave it out but it will have a different texture. The best thing is to give it a try. If it's not a good texture, it won't be a waste because you can use the broken up cookies to make a crust for your next keto cheesecake!
These look great, I think I will try the flat sheet cookie and cut in gingerbread men shape after like you suggested. Just curios did the ones with bestie brown firm up next day? Also I am buying acacia fiber on Amazon to add in and see how that works instead of Keto chow as I like the way those look.
No they didn't! I added a little disclaimer about that in the video but I know it could have been missed. Use the Swerve or another eryhtritol based sweetener instead for these.
What I would do is taste the batter and you can always add in some gingerbread spice if you think it needs it. I don't have any gingerbread ketochow so not sure of the flavor strength.

Public Service Announcement: these are yummy made with the apple pie flavor and plain cinnamon, too 😋 I add a splash of lemon juice whenever I use apple pie to "up" the fruit flavor and I haven't had a problem with it curdling the KC.

They are definitely better, not as dry as the Quest cookies!
I did the recipe times 4. I only used 2 packages of Gingerbread keto chow and then used 3 different protein powders evenly divided in place of the 2 remaining packages of keto chow (I did 4x the recipe). I divided the protein powders among Quest Salted Caramel, Equip vanilla, and Isopure unflavored. I think I need to play with fewer eggs; quadrupling the eggs made it too runny, which I saved with some coconut flour and pork panko. I think more like 5 to 6 eggs for a 4x recipe will work. I did add the xantham gum, but perhaps I need to half that since I am using 2 packs of keto chow. I also used half brown swerve and half golden monkfruit. I just have to say these are wonderful gingerbread cookies. I have tried the Keto chow recipe for gingerbread, and they have that sort of funny protein powder funk going on. But these are great. I like using the blend of proteins as it masks the protein powder thing. I have also done this with Pumpkin Keto Chow. I spray the bottom of a flat glass with coconut oil, dip in golden monkfruit and flatten the cookies some. I also like to add 2 tsp of minced ginger,either fresh or jarred. Anita, your cookie recipes are the best.
wow, I love that! It's also a bit of a cost savings too I think to spread out the Keto Chow usage like that! The eggs make sense because the other protein powders would need less liquid in the mix! Great save though! Thanks for sharing!
Hi Anita! I really enjoy your videos. I like how this community helps each other. Who wouldn't want to bake if they had that fun little tune beckoning🎶🎵!! I love the new silicone sheet. May I make a suggestion...when using your lemon squeezer, put the lemon in flesh side down. I know it seems backward, but it works, and you will get more juice. There are holes in it so you won't have to turn it on its side, the juice will just come out the holes. I could probably eat six of those cookies for breakfast with coffee, especially after fasting 16 hours. They look deeeeelicious! I'm going to have to save up and get me some Keto Chow. Thank you for sharing all of your tips today Anita.

Just made the Keto Chow version right after I viewed your video. My new favourite breakfast. I had a large salted caramel Keto Chow which I used (saving the eggnog for 'adult eggnog' for Christmas Day). Very good, especially the spice mixture. Pre-Keto days I loved a bagel or cookies with my coffee for breakfast. Now I can have healthy cookies. Like also that it makes 6 only. So, so easy to make. I have the muffin top pans also. I used the Swerve brown.

I love the new silicon baking cookie sheet with the lip. It is much more versatile having the lip on it. I need to make the lemon in the Royal Icing next time I make the gingerbread cookies. Mom's lemon tree is loaded with ripe lemons right now. I love lemon in gingerbread cookies and mom used to put lemon curd on her gingerbread loaf too

I made the version with Keto Chow tonight and it was great, but I did prefer the one I made with the protein power flour made from the PSMF bread. My father loved gingerbread and lemon sauce. I remember the first time he asked for it (Mom didn't make it) I thought "What an odd combination; gingerbread and lemon, but the taste is amazing! I made it for him every Christmas afterward. His was more of a cake and cooked custard, though.
I'm looking forward to trying these! My cookies are usually pretty rustic looking. I took Wilton cake decorating classes years ago, but I usually don't have the time to doll things up. 😂 Besides, IMO taste is what matters most.
Yes, the lemon glaze was the thing at our house. Now my coworker says in Eastern Canada they spread butter on their gingerbread cookies. I tried that and I have to say they are onto something! What a very keto thing to do!

Anita I trailed your biscuit recipe - I found brown sugar sub (300grams) on special in the supermarket for NZ$8.99 - I did vanilla with white chocolate chips on top , chocolate with milk chocolate chips on top (keto), Ginger nut and I found in my store I like going to they now have black current whey protein so I made that as well with white chocolate chips on top - I am now waiting for them to cool and see how they are - they don't look fudgy more cakey so will have to look into that further - I used the recipe on your website - Cheers

I can buy Gingerbread spice mix without sugar here in Germany, sadly it has cloves in it. I buy Ostmanns Gingerbread Spice aka Ostmann Lebkuchen Gewuerz. I use the same spice instead of Pumpkin Spice in my bulletproof coffee I drink 4 days a week 🥰
A lot of them have cloves and for some reason my body says NO!

wonderful recipes! I have Isopure unflavored and looked at the vanilla on Amazon. Vanilla has cane sugar as the 2nd ingredient! Eeek. I guess I will check sweetness of the cookie before cooking, just in case. I finally ordered KetoChow and will try that recipe when they arrive to compare. I'm also glad it only makes a small batch.

Oh! Love your Lebkuchen, and can’t wait to try it with the keto chow. I think the length of your videos is always perfect. And the chapter notation ms will be handy when I come back and watch while baking your recipe. Carolyn from All Day I Dream About Food issued a warning not to use allulose, so I was afraid that might happen (although that might apply most strictly with egg-white meringue-style cookies, they are just goo!) I can practically smell your cookies 😋
Allulose is great in many recipes but cookies not so much I am finding!
Hey Anita, great video! The chapters are a great idea, but if people are just interested in Teddy, then they are missing out on all your wonderful ideas and insights. I watch ALL your videos to the end. Unfortunately over in Europe we can't get access to a lot of these powders like Keto Chow etc. so I have to substitute as best I can. I also don't like using a lot of the sweeteners as they're not great for us even ones that are supposedly natural like Xylitol. So I just use raw honey if need be.
You have to do what's right for you! By the end of this month I will be so ready to take a break from sweeteners!

Thanks for another lovely cooking video. You remind me of my mom and sisters. They baked on a regular basis and were very down to earth, practical cooks. And now I can find Teddy on demand!
Just as an FYI, I don’t see that Keto Chow has xanthan gum in it, it does have acacia fiber; which is also a thickener.
Generally, if I want a crisp cookie, I use an erythritol based sweetener. If I want a moist, chewy cookie, I’ll use an allulose based one.
What flavors are you looking at? Every single one I have has both xanthan gum as well as the acacia fiber. And LOL at the Teddi on demand! 💗

I wonder if you mix some granular sweetener with a bit of food colouring and let dry if you could use that as sprinkles. Or use salt and Colour that if like me you like the added salt.
Yes, I was going to look into how I could do this! I used to decorate mine with red and green sprinkles that basically looked like colored sugar crystals

Ordered my Gingerbread keto chow today. Going to make a batch tomorrow using my pumpkin. I ordered the chocolate mint also. Do you think I could make cookies with that and leave out the gingerbread spice? I adore cookies!! I get so cold drinking a shake for lunch! Love your videos, don't shorten them! The Gingerbread spice is completely optional! Make them to your liking and enjoy!
Regarding the cost of Ketochow - with any product you like but are having trouble affording, READ THE INGREDIENT LIST - Ketochow is just powdered milk protein, electrolyte/mineral blend/vitamins/a tiny amount of thickeners and the flavorings. You can make your own and you probably already supplement with vitamins - the electrolytes are a little more complicated but doable with some research. KC just raised their prices and even though money is not an issue for me, I still resent the price points. You're paying a lot for the convenience, especially if you're still having to add the fats too.

That was very interesting. I have always made Dr Oetker Lebkuchen, with the lemon egg white icing. Now that I am keto, I will give yours a try. Don't have Keto chow here in Austria so will try the protein powder and probably add some almond flour.
The best thing was always that the flavour improved with time as the cookies softened. You really should try aniseed in your spice mix if you can tolerate it 😊
I grew up on Dr. Oetker products! I like the addition of the aniseed, not sure if it's an issue or not so next time I have a chance I'll try a little bit.
I loved making them as a child and with my children. The 1979 German home baking book I use only has cinnamon, cloves (sorry you can't do them) and ground aniseed. (1/2 tspn)

Have you tried apple cider vinegar for acid reflux? Many have eliminated that condition with that home remedy. Serious Keto discusses this in one video.
That is exactly how I weaned myself off the meds I was on! I am so grateful to be off the meds but I don't think the sensitivities are ever 100% gone. I still have to be mindful of certain ingredients. I think even Steve at Serious Keto would say that he probably has things that like that too that he has to watch for.

My protein power is non flavor and I know u used vanilla .. can I add spices to the protein powder and if so which ones ? Also NO collagen… can I substitute or leave out ? Thank you 😊 today is my prep day 😅
With the unflavored protein powder I would maybe add more vanilla extract and more of the gingerbread spice mix. The collagen definitely adds some softening and chew, but in the past I have used Knox gelatin instead. You could leave it out but it will have a different texture. The best thing is to give it a try. If it's not a good texture, it won't be a waste because you can use the broken up cookies to make a crust for your next keto cheesecake!

Well since there is no flour used, the protein powder acts like the flour. It also adds a lot of protein!
These look great, I think I will try the flat sheet cookie and cut in gingerbread men shape after like you suggested. Just curios did the ones with bestie brown firm up next day? Also I am buying acacia fiber on Amazon to add in and see how that works instead of Keto chow as I like the way those look.
No they didn't! I added a little disclaimer about that in the video but I know it could have been missed. Use the Swerve or another eryhtritol based sweetener instead for these.
If I’m using ketochow gingerbread should I still add the extra gingerbread seasoning to the cookie recipe
What I would do is taste the batter and you can always add in some gingerbread spice if you think it needs it. I don't have any gingerbread ketochow so not sure of the flavor strength.
