    When you harvest the leaves BEFORE the flowers bloom out, they are not bitter. A friend of mine even used the leaves to make a clear jelly she was excited about. God job on your videos. Very inspiring!

      I've eaten a lot of prebloom and after bloom dandelions. They all taste bitter to me, but you are right, the after bloom are way more bitter than the prebloom leaves are! My pallet is different than most folks, so maybe other people won't find them bitter? Thanks for your comment! This may help folks when they try these wild edibles for the first time!     Oh my goodness. We were raised on dandelion greens. They are some of our favorite food. We forage for all types of greens when spring comes. And dandelions have some of the best health benefits too.
