I used to eat his tze char when he was working at the stall in Upp Thomson. It was so damn good but wasted that tze char stall has closed down. But I'm glad he has opened his own.
I am glad he was able to overcome racism to pursue his dreams. Race has no impact on whether someone can cook any cuisine as long as thar person is willing to learn it. His positive attitude and enthusiasm are so inspiring. I wish him all the best!

Its a form of Cuisine, a borderline BETWEEN Home cooking & restaurant cooking using high fire power & the resulting vigorous toss-sauté Chinese dishes are famous for. Background reasons: Family homemade meals are cooked on stoves not with high fire power (heat) as restaurant commercial stoves. Family kitchens therefore choose to limit toss-fried / sautés dishes to reduce grease on kitchen walls & cabinets. So, in Hk, for rich 鋦氣小炒dishes, people choose to eat out at restaurants, 茶餐廳(CCT) in the case in Hk. In the case of Spore, the food stalls, hawker style is the equivalent of HK’s CCT茶餐廳, a less expensive form of family style restaurants.
