As someone who’s eaten a durian (yes, they smell as volatile as Alvin describes them as) they are extremely sweet, I was so worried it would have messed up that savory stew but I’m surprised it didn’t.
He did say that it was not totally ripe, so there's probably that, and also I don't think a little it of sweetness will mess the whole stew. There's actualle some traditionnal stew that use a little bit of sweetness, like Carbonnade, a stew from north of France, where you traditionally put soft gingerbread on top of the stew ^^
There are over 100 cultivated durian varieties and they vary a lot in sweetness and funkiness. Some of them taste a lot like onions, so I guess it makes sense to put one of those in a savoury stew.
Given that Alvin lives in New York he probably doesnt have a lot of varieties to choose from though.
Sweetness is great in a stew. Tomato, carrots, and corn are all great ways to add sweet to a braise or stew. So is wine, which, like the tomato, will bring acidity as well. My favorite, though, is to caramelize my onions.
I tried a durian moon cake once and the smell was so vile that i was gagging as soon as I smelled it. I couldn't eat more than a bite just because of the smell and I nearly threw up while it was in my mouth because of it.
There is a whole group of durian that dont taste sweet at all, and literally taste like garlic chicken, so a variety like that would be awesome in a stew

You could put all the durian in a jar and let it ferment in room temp for a couple of days. It becomes a pungent, savoury, sweet, fermenty paste called tempoyak. It could be used in a stew dish, or mixed in with sambal. For stewed dish using tempoyak, you could check gulai tempoyak ikan patin. Curried freshwater fish with tempoyak to enhance the flavour.

Now that we have a dedicated video game series for the BCU, I must humbly ask: Please, a Don't Starve video! Cooking's a major part of the game, and there are so many famous dishes from the base games, the DLCs, and even the multiplayer game Don't Starve Together!

Ive never seen this series. I love Alvin- he uses similar humor as Andrew... but clearly gets the references and the personality feels genuine. I'm going to have to see some other stuff from this show.
Alvin is really coming into his own as a second series for this channel. His first few "Anime with Alvin" honestly felt like filler at first, but he's really becoming his own thing. I love the repeated references so those of us in the know can enjoy it (Seriously, Lionels have no business being that hard to take down).
I grew up in the chilly midwest so stews were a huge part of my diet. This is fabulous.
I wonder how long you were holding onto this waiting for the name of Tears of the Kingdom to be revealed.

i love his enthusiasm when he tried the stew. i tend to only eat durian by itself since i don't like it mixed in dishes, sweet or savoury, but this made me curious!

This video came at the perfect time what with the trailer for BotW 2 aka Tears of the Kingdom trailer dropping the other day. The thought of cooking and tucking into a bowl of this recipe while booting up the sequel to BotW in a few months has me very excited :)
They probably timed the video with the Nintendo Direct, knowing that Zelda would likely be talked about. Pretty clever of them!

So, there's a soup in The Legend of Zelda: Twilight Princess that the player helps a yeti make. It's made of the fictional "Reekfish," pumpkin, and goat cheese. I've perfected my own version over the years, but I'd love to see what you guys come up with.

@@KairuHakubi I did use salmon. Which kind usually depends on my budget at the time.
I've actually made this soup! My family absolutely love it and they can't believe that it came from Twilight Princess at all. They thought I made it up with random ingredients. I mostly make it during the Fall/Winter to warm ourselves up and it's so delicious!
@@NeoTheHumalien :) I make mine once or twice a year (last fall, I cut up a carving pumpkin and went crazy with experimental recipes, making the soup as well). Most recently, I made it for a potluck at work and it was a huge success.

I love how you described durian because that is exactly what it smelled like to me. Only my bf (now ex) and I at the time were not bothered by the smell, but the rest of my family couldn't deal with it, and it was only small pieces inside of some mooncakes.

Perfect timing since Zelda: Tears of the Kingdom has just been announced.
This is making me wanna see an episode on some of the curry variations from Pokémon Sword and Shield. It would be another opportunity to do some fun outdoor cooking, and there are a lot of different special ingredients to choose from to show off different flavor profiles and such. Obviously I don’t expect Alvin to fill out an entire Curry Dex in one episode, but I think it would be neat to see a selection of his favorite special ingredients, maybe one to pair with each of the basic flavor profiles in the game (sweet, sour, spicy, dry, bitter, and if one is feeling ambitious, mild).
I’m really loving this series!

clearly you didn't shot ancient arrows at Pidgeon's because then you'd know that using them on non ancient units causes them to not drop anything since it deletes them essentialy
Anyone else wish it was still Binging with Babish, these don’t hit the same with out him, I skip the episodes to the end just to see the food, babish makes it entertaining

Only nitpick I have for accuracy was that nothing drops when you use ancient arrows, but the image of you completely obliterating a pigeon by opening a small worm hole was worth the squabble!
honestly props for leaving in the mistake of forgetting to sear the beef and owning it. Stuff like that happens all the time in the kitchen and it's nice to see it happen with content creators as well.
I like the idea of herbs- I think that when BDG recreated these recipes, he purposely made them awful by not adding salt or seasoning
yeah i feel like some people don't get the difference between "do it like they did in the source material" and "follow the literal ingredients from a crafting table in a video game" because those are very different. The graphics at the result of cooking have special stuff in them that weren't in the recipe..
i know... like i get he was doing a bit, he said himself he was not going for accuracy but that vid hurt my soul even as i laughed.
on the other hand, link does wax rhapsodic about unsalted meat....
Well, he did add salt only when it was mentioned in the recipe.
@@KairuHakubi I agree with the sentiment generally but in the case of unraveled it was less focused on the cooking and recipes, and more focused on comedy. And the spirit of unraveled was all about taking video games unnecessarily seriously

one thing: when shot with ancient arrows, enemies dont drop their drops. so you couldn’t have accidentally shot a bird with an ancient arrow and gotten raw bird thigh. otherwise, great job and looks great

Arcade and Anime with Alvin is really the diversity content this channel needed. Not staying with Western shows only but expanding to the asian market and also videogame culture, all very relevant on the web.
