I've read that you can use vanilla sugar or vanilla extract in the same amount. A 1:1 ratio. 1 teaspoon of vanilla extract=1 teaspoon of vanilla sugar. Thanks for the recipe!
The longer you leave it closed the more it resembles the authentic German vanilla sugar. You can buy at the store your local local German store I should say. I put mine in a blender to get more of that fine powdery consistency and disperse. The vanilla bean farther. I do what you do and put the vanilla bean in there. I’ve also seen some people bake it in the oven before they blend it everybody’s different but I don’t bake mine in the oven but I do put mine in a blender to get that fine powder, consistency, and the longer you leave it in the container and do not open it the more potent and the better it is in tastes trust me on this one don’t open it right away. Make yourself a couple containers when you can use right away and one that you can store for up to a year or more. Those ones are gonna be the best ones. I make mine every Christmas and I give them out as gifts as well. Two per person or per couple when they can use right away and one that they can store up to a year by the time they need new ones, I’m coming through the door with Christmas presents that and of course my German cookies

Thank you for this video. I do however experience a wee bit of trouble with many recipes from Europe where this ingredient is used. This also goes for Baking Powder (Levure Chimique) which it appears that Europeans purchase in sachets. When using these recipes, it normaly just specify use e.g. one sachet of Baking Powder and two sachets of Vanilla Sugar. What is the standard weight or size of these Sachets? A French friend informed me that both sachets are sold in 8gr sachets. Is that correct as the Baking Powder seems a bit much and one can hardly detect the vanilla?
A sachet of baking powder has 15 g and a sachet of vanilla sugar has 8 g. It might vary slightly between brands about 1 g more or less. A sachet of yeast has 7 g and is as much as half a cube of German fresh yeast (just in case you need this information). When it comes to vanilla sugar, I think it’s ok to be generous. I almost always use more than the recipe asks for. While the liquid vanilla in the us can make things taste bitter if you have too much, this doesn’t happen with vanilla sugar 😀.

Sure, you can use vanilla paste instead of making vanilla sugar but if you are asking if you can add vanilla paste instead of a vanilla bean, that won’t work.

Check for vanilla beans in any Italian market in your area. Come vacuum packed and you get a lot for a very good price (at least here in Iowa).

There is no official conversion, just use as much as you like and would usually do in a recipe with the same amount of flour or liquid.

Yes, you can add sugar every now and then but at some point you will need to add a new vanilla pod.
