I changed my fish sauce to Red Boat Fish Sauce and it is much better than Squid Brand Fish Sauce. Thankyou.

@@WorldofThaiFood yes i use Squid brand for cooking 100% and Red Boat only for dipping. the Red Boat is first press only with salt and fish. the Squid also has sugar. this is the best dip recipe on UA-cam i have tried.

but i found out by necessity that it also actually goes very well with french fries
(the other options being ketchup or chili sauce which sux horribly)
Jan Segal Hi! Jaew with 🍟 fries 😆 that’s a first - Like I always say, don’t be afraid to experiment and try new things. In the South of Thailand we eat Nam Jim Jaew with BBQ beef and not necessarily sticky rice so ill make sure to add fries next time ✌️🙏

I'm more keen on consuming garlic, can i substitute shallots with garlic since there's already spring onions used in the recipe? By the way, this is a great video...thanks for sharing. Waiting for your reply. ☺
Hi Run Day Woo! Thanks for watching my video and for your question. You could try substituting the shallots with garlic, but please keep in mind that garlic has a much stronger flavor than shallots and might overpower the other flavors in the dish. The shallots contribute to the unique taste and texture of the Jim Jaew sauce, so if you do decide to use garlic instead, I recommend using it in smaller amounts than the shallots. You could start with half the amount of garlic and adjust according to your personal preference. I'm glad to hear that you enjoyed the video.

Hello, can you tell us more about the tamarind puree and the chili flakes? For the puree, do you recommend a certain brand or package that is frozen to make the puree by adding hot water? Do you make your own chili flakes or recommend a Thai brand for that? Thank you!

However, I personally prefer using non-frozen tamarind purée if possible, as it gives a more intensed flavor to the dishes. As for chili flakes, there are many Thai brands available. I've noticed that nam jim jaew that comes with kor moo yang is often sweeter - with more tamarind. And nam jim jaew that comes with gai yang is often saltier with more fish sauce. Is that your experience too?
The Kor moo yang marinade use sugar so this could be one reason that the nam jim jaew is perceived as sweeter than usual. The taste you describe when having it with gai yang sound like the baseline taste for jim jaew. However, every Thai chef have their unique secrets to put a twist to the end note of the combos discussed so you’re analysis could be correct for the specific establishments you visited 🙏

Yes you can make it without rice powder if you’re allergic. Otherwise I’d recommend you to watch my video on how to make your own rice powder since it gives a nice texture and crunch to the sauce. This should ideally be made and served the same day.

In the US it’s Cilantro but Internationally, the leaves and stems are called coriander. We cater to a global audience and therefore use Coriander.
Other alternative of fish oil mam
Hi! This is not fish oil - do not use fish oil. This is Thai fish sauce (fermented). No other alternatives for this particular recipe I’m afraid. Some foreigners try to make a vegan version of fish sauce but I would not recommend it since it is not authentic. Thanks

Hi! Thai palm sugar is less processed and also organic. I’d recommend you to watch a UA-cam video on how it is made. You can use refined sugars but keep in mind that the taste and smell will vary depending on the product. In my home we use mainly palm sugar but sometimes brown sugar in some stir fries. this isn't hard at all...lists 15 ingredients....I am half Thai, born and raised in Thailand, but Thai food is so hard to make! theres always a million ingredients! all those street food chefs are geniuses, it doesn't get better than Thai street food!
Thai foods are quite complex because of the necessity to balance sweet, sour, salty and heat/chilies. Also, the quality and taste of fresh ingredients vary from day to day and place to place. I think 4 tablespoons of fish sauce was too much, I will try less next time
Unlike regular salt, every brand of fish sauce has different character, the taste also change over time after opening, so it’s important to adapt each time you cook. A good trick is to heat the fish sauce with palm sugar until the sugar melts - this reduces the smell and sharpness of the fish sauce and refine and round the taste.
