We too make our karela the same way. But we dont use mustard oil. And we use a big spoonful of vinegar. It's the salting the vegetable and the extra oil that makes this tasty n less bitter. Thank you for your recipe.

Reena, karela is eaten despite its bitterness. It can also be eaten for taste only by frying and other methods to remove the bitterness. I only said that the nutrients won't be there if bitterness is removed by any of the above methods. People eat Methi too. Some remove the bitterness by washing the chopped leaves. Others don't mind if it's bitter.
So one method of doing away with some bitterness is saute onions and or garlic,add the karela pieces and then cook in tamarind water with all the normal dpices like dhaniya- jeera, chilli powder, a spoon of garam masala and a little jaggery. Believe me it is yum despite the slight bitterness. .
Madam, agr krela chheel kr bnana ho to, chheela huya waste choorn sa fenkna nhi chahiye, fry kr lena chahiye, bahut swad bne ga. Safar k liye krela achha rehta hai. Agr krele me pyaj na dalo aur na hi freez me rkho, ek mheena khraab nhi hoga.
When you apply salt and then wash off the cut karela pieces, a lot of the nutrients(vitamins/minerals) also get washed away. What's the use of eating Karela then? If eating only for taste then it is OK. Karela is eaten for its goodness.
