IDEA: Get yourself a team that can assist you with escaping the police and then go and rob the police department (e.g. steal another gun from the chief of police) mid day. Or, instead of a team, you can just put bounty on the cops mid escaping.

Try pulling off some actual bank hist tricks to lose cops you see in movies, like have someone set up a roadblock with a huge transport truck that pops out of an ally-way after you fly past to cause the cops to crash into it or drive into the warehouse at the docks and have someone impersonate you to distract the cops while you jump into a submarine.
