The SR-71 is only capable of Mach 2.8, no plane is capable of mach 3 yet and its unlikely we will see a mach 3 aircraft for quite a while, especially since its been a while since speed was a priority in aviation

It's perfectly normal for airliners to do that at polar latitudes. Many supersonic military aircraft can do it at any latitude. You can see the sun rise in the West and/or set in the East if you time it right.
